Vegan Hot Cross Buns | Vegan Easter Hot Cross Buns

A Hot Cross Bun is traditionally eaten on Good Friday in many parts of the world. Vegan Hot Cross Buns | Vegan Easter Hot Cross Buns are mildly spiced, slightly sweet and studded with dry fruits with a cross on the top. These buns mark the end of Lent, a traditional time for fasting and/ or abstinence.

As I mentioned that the Vegan Hot Cross Buns | Vegan Easter Hot Cross Buns mark the end of the Lent, every part of these buns represent certain meanings too. The cross on the top is for the crucifixion of Jesus and the spices added stand for the embalming of his body at the time of his burial. So these buns are very significant. I am sure there is much more behind the history of these delicious buns but I am only going to talk about the things I know. Since I am not Catholic myself but having attended a Catholic school for the first 15 years of my life, I have a fondness for the customs and the rich history behind their practices.

Vegan Hot Cross Buns | Vegan Easter Hot Cross Buns can be enjoyed with some honey, maple syrup or with jam and butter, just the way I did! My hubby on the other hand likes them plain with some tea or coffee. He says the spices and the raisins are just perfect and need no toppings. So, you see, you can choose how to enjoy them. I had made the Traditional Hot Cross Buns, with eggs earlier so I tried the Vegan ones with homemade dinner roll recipe, just turned it vegan. And the results were awesome! The vegan buns turned out to be extremely soft and very flavorful too.

As I had mentioned in my Traditional Hot Cross Buns post, I first baked them almost a year and a half ago and not around Easter. I baked them because we got talking about Goa, my hubby has spent a few years there and loves the food to bits!! So he suddenly remembers these Easter Buns that he learnt to bake during his first year in college, obviously he wanted me to make them because he had such a craving!! Lol! So I tried it after a few days using Joy of Baking’s recipe, yes because he only knows what he had learnt but doesn’t remember one ingredient or recipe, hehe! The Easter Buns did turn out delicious! So I kept that recipe handy and made some changes in the quantities to make a smaller batch, which were so delicious. Absolutely melt in the mouth good. Little did I know that the Vegan ones will turn out even more delicious.

These Vegan Hot Cross Buns | Vegan Easter Hot Cross Buns are surprisingly easy to make if you try these, mildly sweet and studded with some dry fruits, they are one of our favorite breads so far! The crumb is moist and yet very distinct as you can see in the picture below.

Please do note that I have small batches here just enough for 2 persons, you can double the recipe or even triple it for a larger batch. Let us bake some Vegan Hot Cross Easter Buns! They are very easy to make and you’ll need very basic ingredients from your pantry.

These steps are for active dry yeast –
Take 1/4 cup of warm water in a glass or bowl, add the yeast & sugar. Stir it lightly. Set it aside for 10 minutes to let the yeast bloom. (Note that if the water is too hot, the yeast won’t bloom. So be careful with the water. If the yeast doesn’t bloom, start again).
For making the dough add the flour in the bowl, season with salt, cinnamon powder and powdered sugar.
Add the oil and slowly add the yeast mixture.
Do not add all the yeast mixture at one go as we may end up with a very gluey and wet dough.
Keep adding a little bit at a time and make a dough.
Add the rest of the 1/4 cup of warm water too, slowly and keep kneading. We may not need all of the water, so use it as and when you feel the dough drying up. Click here for stepwise pictures.

These steps are for instant yeast – 
For making the dough add the flour in the bowl, season with salt, cinnamon powder and powdered sugar.
Add the oil and add the instant yeast.

Slowly add the warm water, a little at a time and knead a dough.
We may not need all of the water, so use it as and when you feel the dough drying up.

These steps are for every kind of yeast –
The dough needs to be tacky and not extremely sticky. remove the dough on the work surface.

Knead for about 8-10 minutes.
You can add some more flour if it’s the dough is still too sticky and again knead it well. The longer you knead it, the smoother and softer it will be. (avoid adding too much flour, that will make the buns too hard, I added just 1 tsp.)
Smoothen the dough with more oil. (I added about 1 tsp more oil.)

Once the dough has become smooth, place it the greased bowl for it’s first rise/ prove. I gave it approximately 50 mins or so.

The dough almost doubled after 50 minutes.
Then I gently punched down the dough and released the air within.
Add in the sultanas and some tutti frutti (optional) and kneaded them into the dough.

I, then greased my hands and divided the dough into 4 equal parts (used a weighing scale for this)

Grease the baking tin with oil and place the divided dough in it. Shaped them and brushed each portion with some oil.

Then I left them for the second rise/ prove in the tin for 30 mins.

Mix together the flour and water to make the paste for making the cross. Fill it in a small piping bag and make the crosses.

Preheat the oven at 200’c for 10 mins. Place the tin on the middle rack and bake the Pav for 20 mins @ 200’c using both the upper and the lower heating coil/ rods/ elements.
Please note every oven works differently hence adjust the temperature and duration according to that.

I brushed them with some more oil as they came out the oven. You can even brush them with some melted apricot preserve. These buns stay fresh for about 2 days at room temperature when stored in an airtight container.

These buns are delicious, studded with dry fruits, mildly spiced and sweet with the tradition cross marked over each bun. They mark the end of Lent. I have shared my version of vegan Hot Cross Buns, do try them.

Ingredients

  • 1+1/4 cup all purpose flour
  • 1/2 tsp granulated sugar if using active dry yeast
  • 3/4 tsp instant yeast you can use active dry yeast
  • 1/2 tsp salt
  • 1/2 tsp cinnamon powder
  • 3 tbsp powdered sugar
  • 1/2 cup warm water not scaldingly hot
  • 2 tbsp oil plus extra to grease and brush
  • 2 tbsp black sultanas
  • 2 tbsp flour + 2 tsp plain water to make the paste

Instructions

So let us get going with the recipe for the Hot Cross Buns | Easter Hot Cross Buns. They are very easy to make and you’ll need very basic ingredients from your pantry.

These steps are for those who are using active dry yeast only
Mix together 130 ml milk, 1 tbsp. granulated sugar and the yeast in a bowl or measuring cup. Set it aside until the mixture turns frothy. It should take about 8-12 minutes. Do not touch the mixture until it has frothed up, if it doesn’t, please discard this and start again.

Take flour, salt, cinnamon powder, powdered sugar in a large bowl. Mix these dry ingredients well.

Then add the frothy yeast mixture after mixing the dry ingredients. Add the egg. Mix well and knead into a dough. The dough will be very sticky/ tacky at first.

These steps are for those who are using instant (fast acting) yeast only – 
Take flour, salt, cinnamon powder, powdered sugar and instant yeast in a large bowl. Mix these dry ingredients well.

Next, add 130 ml of milk and the egg. Mix well and knead into a dough. The dough will be very sticky/ tacky at first.

Following steps are common for both kinds of yeasts used –
Sprinkle some flour on the work surface and knead the dough for 8-10 minutes. You can use some butter to grease the dough if it is very sticky but avoid adding too much loose flour. I have used just about 2 tsp. of dry flour and approximately 2 tbsp. butter to grease it while kneading.

Adding too much loose flour will result in dry and hard buns.

Mix well and knead into a dough. The dough will be very sticky/ tacky at first.

Place the dough in a greased bowl, place this a warm corner for about 1 hour.

It will rise to about double or slightly more in size and look like this in the picture below.

Punch down the dough very gently. Knead it again for another 3-4 minutes. Pls don’t add any loose or dry flour at this stage. You can grease the dough if it is sticky/ tacky.

Divide this dough into 4 or 6 equal parts.

Shape them into round rolls crease side down and place them in a greased baking tray.

Cover them loosely with a cling wrap and set it aside for 30 minutes for the second proving. They will double in size after 30 minutes.

Grease the top of the buns with some butter after the second proving.

Prepare the paste for marking the cross by mixing water with all purpose flour. The paste must be very thick and not at all runny. Fill this paste in a piping bag and set it aside.

In the meanwhile, preheat the oven @200’c for 10 minutes after the second proving.

While oven preheats, mark the cross over the proved buns as shown in the picture below.

Bake the buns @200’c for about 20-25 minutes. Note that every oven works differently so adjust the temperature and duration accordingly. Once the buns are done, take them out of the oven and brush them with more butter.

These buns stay moist and fresh for up to 2 days when stored in a bread box or an airtight container. You can serve them with honey, maple syrup, jams, marmalades, conserves or good old butter!

Tutti Frutti Cake | How to make Tutti Frutti Cake can be made in so many ways and there are a bunch of recipes available out there but I have a basic recipe which I have followed here too. It is my trusted recipe and it has never failed me. It is tried and tested by many and it’s always received excellent reviews. The texture of the cake is just perfect. not too crumbly neither too dry. It has the moistness from the butter and a beautiful color on the exterior too. The crust is not dry and flaky yet has the firmness that is just apt for tea cakes.

Tutti Frutti Cake | How to make Tutti Frutti Cake as a cake is very easy to make, like most cakes it calls for basic ingredients and minimal efforts. But, as most of my readers know that I am particular about the crumb structure of my cakes, few steps are crucial and need a little attention to detail. If you are following my recipe to the T, it will be absolutely easy to nail crumb structure.

A few pointers on the same.
Temperature – Please ensure the ingredients used are all at room temperature. Different ingredients take different durations to come to room temperature, for example, butter takes close 2 hours on an average whereas eggs will come to room temperature in about 45-50 minutes. So accordingly, time yourself in advance before you bake a cake.

Creaming – This is an important step, adding adequate amount of air into the butter gives the cake it’s creamy color as well as the soft texture. Cream the butter using the electric whisk or manual whisk without the sugar to start with. Once the butter turns paler, add sugar in 2 or 3 parts and whisk in more air until the sugar has dissolved. Do not rush the creaming procedure, doing so will leave the sugar undissolved which gives a very crisp and wafer like exterior and the interior of the cake will remain too moist. So please pay close attention.

Whisking – To incorporate the eggs perfectly into the creamed butter sugar, you have to first lightly whisk the eggs in a separate bowl and then add them one by one into the creamed butter and sugar for best results. Whisk each egg for about 1 minute before adding the next. This will ensure the batter does not ever curdle. The batter will be smooth and light pale once all the eggs have been whisked. (check the picture below, the crumb shot shows that each step has been followed with care and the batter has been smooth with just the correct amount of air)

Folding – Never use a whisk to mix the wet and the dry ingredients together. That will cause all the air which we have so carefully incorporated into the batter to escape. One of the main reasons why cakes deflate as they cool after baking. Always make it a point to use wooden or silicon spatula to mix the wet and the dry ingredients together. Cut and fold the batter just enough to bring everything together. Do not over mix the batter. That gives a very hard and tough cake.

Baking – Every oven runs differently, I am talking about OTGs. I do not bake in an convection microwave so have zero clue about how that works. But to bake in an OTG, it is advisable to invest in an oven thermometer to see how the heat in your oven runs before you start baking complex recipes. My oven runs about 10’c hotter so I adjust my baking durations accordingly.

So these are the main steps or tips that give those perfect slices every time. And it goes without saying, slice any cake only when it has cooled down completely.

I had made this loaf a few weeks back and it’s long gone but drafting the recipe is kind of making me crave for a slice or two, lol!! I will probably bake some over the weekend. The beauty about a classic Tutti Frutti Cake | How to make Tutti Frutti Cake is that it never fails to impress. It is loved by everyone alike and one of the most easy recipes to put together if you are just a beginner at baking. This is one of the earliest recipes I remember baking and perfecting the skill. And it also happens to be my hubby’s and my Mom’s favorite cake that I bake, well they do love all my bakes but this one is the most requested cake! 🙂 I do have an egg free version, just incase you wish to have a look, click here.

Now let us bake a Classic Tutti Frutti Cake! 

Begin with getting all the ingredient to room temperature.

Line and prep your loaf tin. I have used a 9″ * 5″ loaf pan. Preheat the oven at 180’c for 10-12 minutes.

In a large mixing bowl, place the softened butter and whisk until it turns pale. I have used an electric whisk to do this and took me about 5 minutes on medium speed.

Add half of the sugar and whisk until it dissolves. Add the remaining sugar next and again whisk until the sugar has dissolved and the mixture is fluffy and pale.

In a small bowl, lightly whisk the eggs. Add the whisked eggs to the butter and sugar mixture in 2 or 3 parts. Whisk the mixture for about 1 minute after each addition of the whisked eggs. The mixture will not curdle this way.

Add the vanilla extract. Whisk for a few seconds.

Sieve the all purpose flour with baking powder in a separate bowl. Add the Tutti Frutti, chopped glazed cherries and black raisins to the flour and mix well to coat them.

Add this dry mixture to the wet ingredients alternating with the milk in 2 or 3 parts and gently fold them together using a spatula. Do not over mix the batter.

Pour the batter into the prepped loaf tin, tap the tin on the platform a few times. Bake it at 180’c for 50-55 minutes or until a toothpick inserted in the center of the cake comes out clean.

Tutti Frutti Cake

Buttery, light and so scrumptious, this classic Tutti Frutti Cake will be your new tea time favorite.

Ingredients

  • 2 cup all purpose flour maida
  • 1+1/2 cup powdered sugar
  • 4 nos. eggs at room temperature
  • 100 gms unsalted butter at room temperature, not melted
  • 1 tsp baking powder
  • 1/2 cup milk at room temperature
  • 1 tsp vanilla extract
  • 1/3 cup mixed tutti frutti
  • 2 tbsp black raisins optional
  • 2 tbsp glazed cherries, chopped optional

Instructions

  1. Begin with getting all the ingredient to room temperature. 

  2. Line and prep your loaf tin. I have used a 9" * 5" loaf pan. Preheat the oven at 180'c for 10-12 minutes. 

  3. In a large mixing bowl, place the softened butter and whisk until it turns pale. I have used an electric whisk to do this and took me about 5 minutes on medium speed.

  4. Add half of the sugar and whisk until it dissolves. Add the remaining sugar next and again whisk until the sugar has dissolved and the mixture is fluffy and pale. 

  5. In a small bowl, lightly whisk the eggs. Add the whisked eggs to the butter and sugar mixture in 2 or 3 parts. Whisk the mixture for about 1 minute after each addition of the whisked eggs. The mixture will not curdle this way.

  6. Add the vanilla extract. Whisk for a few seconds.

  7. Sieve the all purpose flour with baking powder in a separate bowl. Add the Tutti Frutti, chopped glazed cherries and black raisins to the flour and mix well to coat them. 

  8. Add this dry mixture to the wet ingredients alternating with the milk in 2 or 3 parts and gently fold them together using a spatula. Do not over mix the batter. 

  9. Pour the batter into the prepped loaf tin, tap the tin on the platform a few times.

  10. Bake it at 180'c for 50-55 minutes or until a toothpick inserted in the center of the cake comes out clean. 

  11. Let the cake cool for about 10 minutes in the loaf tin, then demold the cake and let it rest on a cooling rack for about an hour before slicing.

  12. This cake can stored for up to 5 days in an airtight container.

Take raw, unroasted and unsalted cashews, wipe them with a dry kitchen towel to remove any dirt. Make sure they have no moisture. Weigh the cashews and set them aside.

Get all the ingredients and other things ready because once we start to grind the nuts and bring the dough together, the dough could dry out if kept to rest for too long.

Now, grind the cashews into a fine powder in batches. We don’t want to over grind them as they’ll turn into butter.

Sift the powdered cashews, collect the leftover bits of cashews and grind them again into a fine powder. Sift that too.

Take the sifted cashew powder in a large bowl. Sift in the icing sugar in the bowl. Mix them together. Add almond extract.

Take the water in a pan and add the granulated sugar, boil for 2-3 minutes to dissolve the sugar.

Use a teaspoon of the sugar water at a time to make a soft and smooth dough (I used about 4-5 tsp. of the water).

Do not apply too much pressure while you knead the dough, the cashew powder will release too much oil and that will make the dough too sticky.

Next, divide the dough the equal sized balls. I used the weighing scale to make 4 parts of the dough.

Add colors of your choice, use silicon moulds to shape them (if you are using silicon moulds, dust them with a bit of icing sugar before proceeding with shaping the marzipans).

Recipe Notes

You can use almond meal/ powder in place of cashews and make the same recipe which is the authentic marzipan.

If you don't have moulds, make small balls of the dough and decorate with some sprinkles, etc.

Let us start with these beauties, they seem a little involved but very easy!

Combine salt, almond flour and all purpose flour in a large mixing bowl. Set it aside.

In a separate bowl, cream the butter and sugar together until just combined. You don’t need to cream them until fluffy.

Add vanilla extract and almond extract, mix until combined.

Add the dry flour mixture to the creamed butter mixture. Mix these together until just combined. Shape the dough and wrap it in a cling wrap.

Chill the dough in the refrigerator for a minimum of 60 minutes. You can store this dough in the freezer for about 3 weeks.

Place the tops with the cut out linzer eyes on a separate parchment lined baking sheet and chill them for 15 minutes too.

Pre heat the oven for 10 minutes @ 180’c.

Bake all the bottoms first for 15 minutes at 180’c. They will turn slightly golden on the edges once they are done. Next, bake the cut out tops for 12 minutes at 180’c as they have lesser surface area. They will turn slightly golden on th edges once they are done.

Once all the cookies are baked, let them sit on the hot baking trays for 10 minutes as they crisp up. Then move them on the cooling rack and let them cool down completely.

Warm the jam just the little bit. Take all the bottom cookies and spread some jam on each cookie.

Dust the tops of the cut out cookies with some icing sugar. Place the top cookies on the jam covered ones and make cookie sandwiches. Be careful not to smudge the icing sugar while making the cookie sandwiches.

They keep fresh in an airtight container for 2-3 days.

Lilva Ni Kachori | Fresh Pigeon Peas Kachori | Toovar Kachori is one of the most popular snacks from Gujarat, typically made in the winters when the markets are a flood with fresh pigeon peas or Toovar dana a.k.a. Lilva dana. These kachoris or hand pies are small in size, they are filled with a sweet and spicy mix made with these fresh pigeon peas and deep fried until crisp and golden!!!

Lilva Ni Kachori | Fresh Pigeon Peas Kachori | Toovar Kachori are typically made in winters as the fresh pigeon peas are available in the season for just a couple of months. So, these little, golden crispy kachoris are a must have delicacy in Gujarat. Lilva Ni Kachori | Fresh Pigeon Peas Kachori | Toovar Kachori are quite famous across the country for their spicy, tangy and yet sweet filling and that super flaky exterior!

Lilva Ni Kachori | Fresh Pigeon Peas Kachori | Toovar Kachori is super flaky and crisp to the core, as you can see here!! I can’t imagine calling it a kachori if it ain’t crispy and flaky enough. The crispy exterior makes way for this really delicious, melt in the mouth kind of filling. The filling is so, so good that I had to physically keep away from it until I was ready to fill these babies up!! 😉 I personally feel it pairs the best with some spicy green chutney, the sweet and spicy filling compliments the chutney. You can also serve these with sweet tamarind chutney or some mint and yogurt chutney.

Lilva Ni Kachori | Fresh Pigeon Peas Kachori | Toovar Kachori are best consumed fresh and piping hot, with some tea. Though no tea for me but the hubby can’t live without his tea and these golden beauties make for the best tea mate 🙂

Let’s make some kachoris.

For the dough
Take Maida (APF), add salt to taste and the oil.

Rub the flour with the oil for 3-4 minutes. The Maida/ flour must resemble breadcrumb like texture.

Add the lemon juice and make semi hard dough using a little water at a time. The dough must be like a poori dough but not too hard else the kachori will crack when fried.

Cover the dough with a damp kitchen towel and rest it for 15 minutes. Then divide them into 8-9 lemon sized balls. Cover again and let them rest.

For the filling
Peel and clean the fresh pigeon peas/ Lilva. Wash and drain them. Do the same for the green peas.

Blanch these together for 10 minutes, set them aside to cool down completely.

Once they are cooled, crush them together either using a mortar pestle or in a food processor. They must have some texture and not turn into a paste. Set this aside.

Heat oil in a non stick pan ( the Lilva/ pigeon peas tend to stick so use a non stick pan). Once the oil is hot, add asafetida, cumin seeds. Let them crackle.

Next add ginger and green chili paste. Cook them for a few minutes. Add turmeric powder. Sauté for a minute.

Add roasted white sesame seeds and the coconut. Mix well.

Next, add the crushed pigeon peas/ Lilva and the green peas. Sauté these together for 5-6 minutes.

Add salt. Cover and cook for 2-3 minutes. Stir again. Again cover and cook.

Add chopped cashews, sugar and chaat masala. Mix well.

Add lemon juice and chopped coriander leaves. Mix well. Turn off the flame. The filling is ready.

Divide the filling into 8-9 lemon sized balls as well.

Now, roll all the balls of dough to a diameter of 2.5″ to 3″.

Place the ball of the filling in the center of the rolled dough. close it tightly. Do the same for all the dough balls. set them aside while you heat the oil to fry the kachoris.

Now fry the kachoris on low flame as they must crisp up and the color must remain light golden brown.

It took me about 15 minutes for frying a batch of 8-9 kachoris. Drain the fried kachoris on absorbent tissues.

  • salt to taste
  • water as needed to knead the dough
  • enough oil to fry

Filling

  • 1/4 cup fresh green peas
  • 4 tbsp refined oil
  • 1/2 tsp cumin seeds
  • a pinch of asafoetida (hing)
  • 1 tsp ginger paste
  • 1 sp green chili paste
  • 1/4 tsp turmeric powder
  • 1 tbsp roasted white sesame seeds (til)
  • 1/2 cup fresh, grated coconut
  • 1 tsp chaat masala
  • salt to taste
  • 1.5 tsp sugar
  • 2 tbsp chopped, fresh coriander leaves
  • 2 tsp lemon juice

Instructions

Once it’s ready, you can let your imagination take shape and dole out the prettiest cookies! Since, they dough is very simple to make, you can make these cookies in multiple batches and even freeze some dough for 15-20 days.

Egg free Cookie Box | Christmas Cookie Box can be filled with any variety of cookies. But, I chose to use my sugar cookie recipe with some changes as a base to fill this Egg free Cookie Box | Christmas Cookie Box. Once you’ve perfected the cookie dough and then baked it perfectly, use different ideas to present them. I’ll walk to through the 3 ideas that I’ve used for my Egg free Cookie Box | Christmas Cookie Box.

Egg free Cookie Box | Christmas Cookie Box first had the classic stamped sugar cookies. One can never go wrong with these. I have used Holiday stamps to press a design on 8 cookies before baking them. Simply roll out the dough, cut the shapes, stamp them and the refrigerate the cookies  for 15 minutes before baking them for 10-12 minutes. They must not change their color. This way they wont spread much. They will also retain the beautiful design as they won’t spread.

If you don’t have these stamps, simply keep them plain, cut them out, refrigerate them for 15 minutes and then bake them 10-12 minutes. They must not change their color. They will first be very soft but leave them on the baking tray. They will crisp up as they cool. Once they are completely cooled, store them in airtight boxes, they will remain fresh for 3-4 days.

Egg free Cookie Box | Christmas Cookie Box next had the classic jam filled Linzer cookies! They are so delicious, buttery cookies sandwiched with some homemade strawberry jam is a delight. You can even fill it with a jam any other flavor, but I prefer strawberry or raspberry.

I have used a snowman shaped cookie cutter this time, I cut out the snowman shape from 3 cookies, and cut 3 plain cookies for the base of these linzers (if you don’t have fancy cookies cutters to cut out shapes, simply use the cap of a bottle to cut out  shapes). Then I refrigerated the unbaked cut outs for 15 minutes and then baked them for 10-12 minutes. They must not change their color. They remain soft at first, let them sit on the baking tray so that they crisp up. Fill the plain cookies with the jam, top them with the cut out cookies. Dust the top of the cookies with some icing sugar and then store these in airtight boxes. They too keep fresh for 3-4 days. The tiny snowmen in the pictures are the cut outs which I chose to bake and use as Holiday Décor.

Egg free Cookie Box | Christmas Cookie Box must have some candy cane cookies! It’s Christmas and they look just apt. They are a bit tricky I agree, but very easy to put together. I suggest you do make these but with gel based color only as that gives the best outcome and don’t tend to stain th white portion at all.

Please follow the instructions very carefully to nail these candy cane cookies. I took 2 balls of the dough that weighed equally (60 grams each). I colored one ball with red gel color and left the other ball as it is.

Roll the two balls into long thin logs of the same size an width and then follow the steps shown in the pictures below.

As shown in the first picture here, twist the red colored and the white log together. Then cut out 8 equal sized pieces of the twisted log. Bend one end as shown in the second picture. Repeat for the remaining 7. Place of the baking tray and refrigerate for 15 minutes. Bake these for 10-12 minutes. They must not change color. Let them cool completely on the tray, they will crisp up too. Store them in airtight boxes and they will remain fresh for 3-4 days.

These are baked, as you can see the shape is perfect, none of the cookies have spread.

You can double or triple the quantity of these cookies by doubling or tripling the quantity of the ingredients of the sugar cookie dough.

We will now see the recipe for a batch of the dough.

In a bowl add the all purpose flour and icing sugar. Whisk these together.

Now add softened butter and vanilla extract.

Use the whisk to mix them together, no need to whip them. (click here to get the best tips to ensure perfect cookies that never spread). The texture of the mixture will resemble bread crumbs.

Now, add 1 tablespoon of the milk at a time and bring the dough together very gently.

Do not over knead this dough. Also, please do not add more milk than necessary. I used approximately 3-4 tbsp. of milk and it was good enough.

Next, wrap this soft dough in some cling wrap and set it in the refrigerator for 30-40 minutes.

While the dough rests in the refrigerator, prep a baking tray with parchment paper. Set this aside.

Remove the dough from the refrigerator after 30-40 minutes, dust the dough and the rolling pin with some all purpose flour. (I used a silicon sheet to roll this on, the dough won’t stick at all).

Roll the dough to a thickness of 3-4 mm. Use any fancy cookie cutter to cut the dough into shapes or just cut then squares using a basic knife. You can even use any cap of a container to cut shapes, they look just fine and pretty.

Now place these cut out cookie shapes on the parchment lined baking tray. Refrigerate them for 15 minutes.

Preheat the oven @160’c for 10 minutes.

Bake the refrigerated cookies for 10-12 minutes. The baked cookies must not change color. Remove them from the oven and let them crisp up on the baking tray for 15 minutes.

Then transfer the cookies on a cooling rack to cool them completely. Then store them in airtight containers.

They keep fresh for 3-4 days. Or follow the steps mentioned in the post above to make different varieties of these cookies.

Ingredients

  • 1 cup All Purpose Flour

Follow the steps given above for ways to make different varieties of cookies using a single dough recipe. This dough can be frozen for up to 2 weeks wrapped in a cling film. To thaw, place the dough in the refrigerator for 12-15 hours. Then follow the recipe to roll them, refrigerate and bake the cookies.

Roasted Murmura Chivda Recipe | Puffed Rice Chivda is super yummy. It’s so addictive, I, for one can’t seem to stop munching on this if I’ve made some of this chivda. I make a large batch thinking it will last me a week or more, but I seem to finish it within 2-3 days! I guess the only reason why I particularly love this chivda is because it barely has any oil as opposed to the store bought variants.

The store bought chivdas are a strict no for me, simply because find them oily and too salty. My Roasted Murmura Chivda Recipe | Puffed Rice Chivda on the other hand is light as air!

Roasted Murmura Chivda Recipe | Puffed Rice Chivda is actually a family recipe. I’ve simply followed what my Mom instructed me to go on adding to make this chivda. I’ve been eating it since I was a kid, first at my maternal granny’s place because my aunts made the best chivda ever! Then my Mom would make the same thing back home too.

So, I had to learn to make it post my marriage simply because I missed it! After I had made it a couple of times, I realized that is easier to make this than kneading a dough!

This comparison because in my initial months of cooking, some 6 and half odd years ago, I had a terrible time kneading a dough for roti or paratha! So being able to knead a decent dough became my benchmark for the first few months, lol!! Yes, I had a tough time with that. Gladly, that’s behind me now and it’s safe to say I make the best rotis ever!! My Mom and the mister, have both given their nods! Rather enthusiastically, I’d say! 😉

Roasted Murmura Chivda Recipe | Puffed Rice Chivda can made in many ways. Every family has a different recipe even if they differ ever so slightly!! The thing is I have reduced the additives or the munchies that can go in this chivda or trail mix. Simply because the more munchies I needed to add meant the more frying it involved. That definitely meant all the more oil!

So I stick to munchies that can be pan roasted, but if you have an air fryer then you can add any number of fryums, munchies, etc. I don’t so I refrain from going over with them.

Anyways, let’s get going then. There maybe way too many steps to be followed here but trust me, it makes the job easier. It’s a bit involved but definitely a 30-40 minute task for a week full of yumminess! 😉

Sieve the murmura/ puffed rice once.

Heat a large heavy bottomed wok. Dry roast the sieved murmura/ puffed rice until golden and crisp. This takes about 7-8 minutes on low flame.

Remove the roasted murmura/ puffed rice in a plate and set it aside.

In the same wok, dry roast peanuts until slightly brown and crunchy.

Remove the roasted peanuts on a plate and set them aside.

In a pan, brush some oil and roast the papads/ poppadums’ until golden.

Set the roasted papads/ poppadums’ aside too until they crisp up. Let them cool down then break them into bite sized pieces.

Now, heat the wok again and add oil.

Once the oil is hot, reduce the flame to medium. Add hing/ asafoetida, cumin seeds and mustard seeds. Let them crackle.

Next add turmeric powder and curry leaves.

Let these crackle too for a few seconds.

Next, add the roasted peanuts. Mix well.

Then add salt to taste, red chili powder, kala namak/ Himalayan pink salt and chaat masala. Mix well.

Add the papad/ poppadum pieces. Mix gently and avoid breaking them.

Add the roasted murmura/ puffed rice in the end and mix everything well until the masala/ spices coats everything well.

Turn off the flame. Let this chivda/ trail mix cool down completely in the wok. Transfer it into a clean and dry glass jar or a stainless steel/ airtight container. It keeps fresh for 3-4 weeks if the container is kept tightly closed and away from humidity.

You can add more fryums, potato sticks, etc. to this chivda/ trail mix if you like.

Total Time: 30 minutes

Ingredients

  • 250 gms murmura/ puffed rice
  • 1 cup peanuts (keep the skin on)
  • 3-4 papads/ poppadums''
  • 2 tbsp. oil
  • a pinch of hing/ asafoetida
  • 1 tsp. cumin seeds
  • 1 tsp. mustard seeds
  • 1/2 tsp turmeric powder
  • 3/4 tsp red chili powder
  • a sprig of curry leaves
  • salt to taste
  • kala namak/ pink Himalayan salt to taste
  • 1/2 tsp chaat masala

Instructions

Kesar Mawa Modak | Gluten free Saffron Fudge is very easy to make and needs very little prepping. A traditional occasion like Ganesh Chaturthi calls for a special treat, these kesar modaks fit the bill perfectly! The aroma of modaks by itself reminds of Ganesha ji and I can’t seem to stop at one! 10 days of Ganesh Chaturthi festivities and about 100 modaks later, I’m still game for some more!!

The variety that one finds with modaks these days in sweet marts is infinite. All sorts of flavors and colors are really so tempting. But what intrigues me the most is the shape of these modaks. I just love how beautiful they look, the perfection behind each Modak is so breath taking! Anyways, you can achieve that with the moulds that are available these days in shops.

Kesar Mawa Modak | Gluten free Saffron Fudge

Kesar Mawa Modak | Gluten free Saffron Fudge is made easily using just a few ingredients from the pantry. This means you can make these to offer to the Lord during the festivities without much difficulty. Times of festivities are pretty busy in any Indian household and being to whisk up traditional goodies in the comfort of your home is priceless.

These modaks do not have preservatives or any kind of flavor enhancing agents, hence they are the healthy way to go. Since I’m fond of the basic flavored modaks rather than the fusion ones, I’ll share the recipe of kesar modaks. This recipe is adapted from my recipe for basic Burfi.

Kesar Mawa Modak | Gluten free Saffron Fudge

Let’s start with bringing all the ingredients to room temperature.

Break mawa/ khoya into pieces. Heat a large pan.

Place these pieces in the pan, let them melt on low flame.

Once the mawa has melted, add powdered sugar, kesar dissolved in milk, cardamom powder and food color. Mix well.

Keep stirring on low flame until the sugar dissolves. The mixture will loosen up some more as the sugar melts into it. Keep stirring continuously on low flame.

The mixture will become frothy. Do not stop stirring.

Keep stirring on low flame for the next 8-10 minutes.

This mixture will thicken now and leave the sides of the pan. It’s consistency should be like that of a loose dough.

Remove it in a plate and let it come to room temperature.

This mixture will be like a dough, using the moulds, make modaks of any size you prefer.

Follow the steps in the below pictures to make the perfect shapes. I’ve used modaks moulds.

Use a little ghee to grease these moulds to enable easy unmolding once they have take the shapes.

  • 200 gms mawa/ khoya
  • 7 tbsp. powdered sugar
  • 1/4 tsp. cardamom powder
  • few strands of saffron/ kesar dissolved in
  • 3 tsp. warm milk
  • 2 drops yellow food color, gel based (optional)
  • ghee to grease the moulds

Instructions

  1. Let's start with bringing all the ingredients to room temperature.

  3. Place these pieces in the pan, let them melt on low flame.

This preparation is usually enjoyed with Jowar Bhakri (millet flatbread), crushed onions and some thecha (Maharashtrian green chili relish). Trust me, it’s such a heavenly combo and the flavors are absolutely earthy and rustic.

The earthy flavors of coconut, garlic, cumin, etc. make for the perfect spice blend. The texture too is really nice, pair them with rotis or rice.

Anyways, let get started. This preparation is a little involved but pretty straight forward too.

In a blender jar, grind together the desiccated coconut, cumin seeds and sesame seeds to a coarse powder.

Then add chopped coriander leaves and garlic to the powder and grind everything to a coarse paste. Do not add water while grinding this paste.

Heat 1 tbsp. oil in a pan. Once it’s hot, add asafoetida and chopped onions. Sauté the onions until they are translucent.

Add chopped tomatoes next, cook them until they are mushy and the oil separates.

Add the ground paste and sauté for a few minutes. Add goda masala, roasted peanut powder, turmeric, jaggery, red chili powder and salt to taste. Mix well.

Cook this mixture for 4-5 minutes. Then turn off the gas. Let this mixture cool down completely.

Follow the above step for all the brinjals. set them aside.

Add about 2 cups of water in the same pan in which the masala stuffing was made, bring it to a boil. Turn off the heat and set it aside.

Heat 1 tbsp. oil in another pan. Once it’s hot, add the stuffed brinjals and sauté them until they turn brown on all sides.

Next, add the boiled water and salt to taste to the brinjals. Cover and simmer the brinjals in the water until they are cooked and the gravy has thickened. It took me about 15-18 minutes for the brinjals to cook and the gravy to thicken.

Serve piping hot with roti/ bhakri or some steamed rice.

Bharli Vangi or Maharashtrian Style Stuffed Brinjals are a traditional dish from Maharashtra flavored with coconut, sesame and spices. They are absolutely lip smacking yummy!

Ingredients

  • 7 nos. small brinjals/ eggplants
  • 2 nos. medium onions, finely chopped
  • 1 no. tomato, finely chopped
  • 1 tbsp. goda masala
  • 1/2 tsp. turmeric powder
  • a pinch of asafoetida
  • 1/2 tsp jaggery
  • 2 tbsp. roasted peanuts powdered
  • 1 tbsp. oil
  • salt to taste
  • For the paste-
  • 2-3 tbsp. desiccated coconut
  • 1 tbsp. white sesame seeds
  • 1 tbsp. cumin seeds
  • 14-15 nos. cloves of garlic
  • 6-7 tbsp. chopped coriander leaves

Instructions

    For the paste
  1. In a blender jar, grind together the desiccated coconut, cumin seeds and sesame seeds to a coarse powder.
  2. Then add chopped coriander leaves and garlic to the powder and grind everything to a coarse paste. Do not add water while grinding this paste.
  3. Heat 1 tbsp. oil in a pan. Once it's hot, add asafoetida and chopped onions. Sauté the onions until they are translucent.
  4. Add chopped tomatoes next, cook them until they are mushy and the oil separates.
  5. Add the ground paste and sauté for a few minutes. Add goda masala, roasted peanut powder, turmeric, jaggery, red chili powder and salt to taste. Mix well.
  6. Cook this mixture for 4-5 minutes. Then turn off the gas. Let this mixture cool down completely.

Notes

1. I have used small purple brinjals. 2. You can use small green ones too. 3. Add more water if you want to adjust the consistency of the gravy when serving with rice.
