Bombay Aloo Masala Sandwich | Spicy Potato Sandwich

Bombay Aloo Masala Sandwiches are a staple street food in Amchi Mumbai….or maybe a vegetable toast sandwich or a plain Chutney (salsa) sandwich…the options are endless and oh so yummy! 😍

I personally love the vegetable cheese grill sandwich! It’s like the best of both worlds…you get veggies and if you are a cheese lover like me…it’s just so good with that cheese within and on the outside😍😍😍😍….a side of some potato crisps/ chips/ wafers…and some ketchup😋

Similarly, there is another hot favourite among most Mumbaikars….the spicy, aromatic and very delicious Bombay Aloo Masala Sandwich…make it as a toast sandwich or a grilled one…it’s amazing! Aaaaannnddd…..it’s my hubby’s favorite 😘

This is a regular breakfast or evening snack at our place…and my Mom’s recipe for the filling/ Aloo Masala is super duper yum!

I usually use brown bread to make them…you can use regular white sandwich bread or any multigrain bread if your choice. I had once even used a Homemade Herbed Focacia bread for this sandwich and it was so good! Do try my recipe for Green Chutney, it goes so well with sandwiches.

Anyways…let’s get you started on the recipe..

To make the filling:

Heat oil in a non-stick pan. Once the oil is hot, add cumin seeds, hing and chopped green chillie. Sauté for a minute.

Next, add the chopped onions. Sweat them for a few minutes. Then add the capsicum. Sauté again. Tip in the tomatoes followed by the salt, turmeric, red chillie powder, ginger-garlic paste. Mix well and cook these together until the tomatoes turn mushy and the raw smell of the ginger- garlic paste goes away.

Next, add the mashed potatoes along with the Pav bhaji Masala. Also add the amchur powder and mix well. Turn off the flea me. Add chopped coriander leaves and give them all a final mix. That’s your filling done! Keep well in the refrigerator for 3-4 days.

To make the sandwich:

Take 2 slices of bread. Slather both the slices with butter. Sprinkle some chaat Masala (optional) and spread a thick layer of the potato filling. Heat the griller/ toaster…spread some butter on the griller plate and place the sandwich on it and let it crisp up on both sides. Serve hot with some chips/ crisps and ketchup!

Bombay Aloo Masala Sandwich | Spicy Potato Sandwich

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: can be used for upto 6-7 sandwiches with generous amount of the potato filling.

Bombay Aloo Masala Sandwich is spicy, tangy and very delicious. Perfect for breakfast, brunch, lunch box or even a quick meal.

Ingredients

  • 5 nos. large potatoes (boiled and mashed)
  • 3 tbsp oil
  • 1 tsp finely chopped green chilli
  • a pinch of hing (asafoetida)
  • 1/4 tsp cumin seeds (jeera)
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped green bell pepper (capsicum)
  • 2 nos. finely chopped tomatoes
  • salt to taste
  • 1 tsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp Pav bhaji Masala
  • 1/4 tsp amchur powder (raw mango powder)
  • 1-2 tsp water (if needed to correct the consistency)
  • 2 tsp chopped fresh coriander leaves
  • butter as needed to grill/ toast the sandwiches
  • bread slices as needed

Instructions

    Filling

There are days when I go through the entire ritual of sautéing some exotic veggies like some American sweet corn, broccoli, some snow peas and a bit of bell pepper along with some crushed garlic to go with my pasta…and then are days when all I want to do is dump the sauce with some boiled pasta and give it a quick stir and I serve it without any fancy-shmancy garnishing…just a bit of grated cheese and I am all sorted🤗

And hence, happens my quick macaroni with some spicy, vegan-Glutenfree arrabbiata sauce! Just like that….and obviously it’s one of my favourite meals👌🏼😍

This sauce can also be used for topping up your bruschetta along with some slices of olives or just some crumbled feta cheese…..some capers, if like little bursts of salty..briny flavours….see..I have given you some ideas for your next girls’ night in…or if you’re a dude reading this here…make a bruschetta platter for your buddies as you watch the latest season of IPL ’17….or impress a lady friend with your sauve kitchen moves😉

I use this sauce for my chip-n-dip platters on movie nights with my fella…it’s healthy and definitely delicious! Follow this easy recipe for some healthy Wholewheat crackers to go with this sauce.

**Coming to how you would go about storing this sauce. I make a slightly larger batch and refrigerate it and it stays fresh for almost 10-12 days. I don’t add salt while this sauce especially when the purpose is to store it. To freeze, simply cool the sauce and pack them in small ziplock pouches and freeze them. The freezer sauce needs to be thawed at room temperature for about an hour before using it. Always remember to season it using the stored sauce. When making the sauce for immediate consumption, then do add salt as per taste.

Now, on to the recipe….

Yield: serves 2-3 persons

Equipment: a heavy bottomed saucepan, measuring cups/ spoons, a ladle, hand blender.

Ingredients:

3 cups blanched and roughly chopped tomatoes (choose ripe tomatoes)

3/4 cup finely chopped onions

salt to taste (I used sea salt)

freshly cracked black pepper to taste

4 tbsp olive oil

3-4 cloves of garlic, crushed

a few fresh basil leaves (or use dried)

2 tsp chilli flakes

1 tsp dried oregano

1/2 tsp dried rosemary

some warm water if needed to correct the consistency

Method:

Heat oil in the pan, once it is hot enough, add crushed garlic and onions. Sweat these until the onions turn translucent and the garlic turns a bit golden. Then go in the roughly chopped chopped blanched tomatoes.

Keep the flame on low, season with salt, chilli flakes, cracked black pepper, rosemary and oregano. Keep stirring these together for a few minutes to ensure the flavours blend well. Add some warm water at this stage to correct the consistency (I added about 3/4 cup), mix well and cover with a lid and let the sauce cook for about 10 mins on low flame.

Open the lid after 10 minutes, the sauce should be done by now. Turn off the flame, let the sauce cool off a bit. Then using a hand blender, blend the sauce as much as you prefer. I like my sauce a bit chunky so I don’t go overboard with the blending.

If you are making a pasta dish immediately, just add this entire sauce to about 2 cups of boiled macaroni or penne and give them a good toss. Garnish with some finely chopped fresh basil leaves and some grated cheese!

Vanilla Sponge Cake in Pressure Cooker

There are somethings which you learn unknowingly, just by watching it way too many times…although that’s just in your subconscious. You don’t really know whether you already have known it all your life until you’ve tried it – my Mom’s Vanilla Sponge in a Pressure Cooker is just that for me, with a slight variation of my own that I’ve perfected over the years 😘

Ain’t this a beauty! Such an easy recipe, even easier is the technique which is I’ve learnt from my Mom, she’s an expert with cooker cakes…no, not because she doesn’t own an oven….(she has a very rare flame heated English oven, almost like Nigella’s, that’s over 3 decades old & has seen some of the best bakes in its time)….it’s merely a thing of convenience for her to bake in a pressure cooker and get done quickly! She’s my Mom after all, quick and easy is something that’s been passed on me by her…☺️

The hand that held mine once, holds on a piece of cake made by the one she made. How ironical! My first time clicking with a model, my Mom💖…the best part, this cake was made in her kitchen…using her utensils & equipments…(the props are mine…I end up stocking up on them wherever I go!)…almost the traditional way. I beat the sugar with the eggs using a manual beater for the first time in my life! That’s how she still does and says that is the correct way to incorporate the air into the batter for a light and airy cake… the results are here for you to see. She has a point. I will follow this more from now…give my muscles a bit of a workout! 😂 Also, no parchment/ baking paper!

So coming to the recipe, my Mom uses homemade white butter when she bakes a cake. I have used oil in place of the homemade white butter as she didn’t have that ready at home. Also, I have added some milk…it really does make the cake so much more moist, here she agrees with me! You learn some, you teach some!

Yield: a 6″ square cake

Equipment: a mixing bowl, measuring cups/ spoons, baking tin, a large pressure cooker, a spare steel bowl, a cooling rack.

Ingredients:

1+ 1/2 cup powdered sugar

2 eggs at room temperature

1+ 1/4 cup all purpose flour (Maida, sieved once)

1/2 cup milk

1/2 cup refined oil

1 + 1/2 tsp baking pwd

3/4 tsp vanilla extract/ essence

Method:

Prepare the tin with some oil and dust maida (APF) all over. Set aside.

In a bowl, beat together the sugar & eggs until light and frothy.

Then add the sieved flour, milk & oil. Beat again & add the baking powder with vanilla extract. Beat well, set aside.

Heat the pressure cooker on high flame for 10 mins. Place a bowl or plate inside at the bottom. DONT ADD WATER IN THE COOKER.

Fill the batter in the ready tin upto half its capacity and place the tin in the heated pressure cooker on the bowl kept at the base. Cover the pressure cooker with it lid but remove its gasket and weight. Bake on medium flame for 40-45 mins.

Do a toothpick test and check if the cake is ready after 40 mins, it should come out with a few moist crumbs, if your cake is ready then remove from the cooker using kitchen tongs and cool the tin on cooling rack for 10 mins before unmoulding the cake.

If the cake in undercooked, then let it cook for another 10 mins. It should be ready by then. Slice and serve.

This cake keeps well in an airtight box for 3-4 days.

Kiwi Agua Fresca

I know that you aren’t exactly looking for a summer drink in a climate that calls for Pyaaz ki Kachori and a cup of hot, ginger tea!! But when it comes to Kiwi, I can only think of Popsicles or some healthy drink (not too cold as I am still recovering from a bout of viral 🙄 So my Kiwi Mojito Popsicles are out question) and a crisp, fruity Agua Fresca is just the answer for it! Delicious, healthy and pretty….all at the same time 😘

Also, because I am in no mood to go into making anything elaborate that’d keep in the kitchen for long..nope, not happening! Meaning, this one’s too easy 😂

So what’s an Agua Fresca you’ll ask me..well it’s Spanish for ‘fresh water’ and can be made with a variety of fruits for adding a lovely flavour to water. I have made some with watermelons last year..(never blogged that though). This time around, it’s with some juicy kiwis, mostly because I’ve about a dozen of them sitting in my refrigerator and the Mister ain’t a fan of the fruit by itself. So this drink is a good option taste wise and to bring in some colour to these drab, grey rainy days 🤗 And pairs well with some Corn & Paneer Toasties for a quick and filling snack 👌🏼

Let’s see how…

Yield: serves 2-3

Equipment: a blender, measuring cups/ spoons.

Ingredients:

2 nos. green kiwis peeled & sliced (do not de seed)

1 tbsp honey (optional)

3 cups water

Method:

Place all the above ingredients in the blender and give them a go until the fruit is blended completely. Taste for sweetness and adjust. You can add more water if you like a slightly thinner beverage.

Serve immediately and enjoy! This drink tastes best with the crunch of the seeds from the kiwi fruit so do not strain it. But that’s upto you!

You can also place a slice of kiwi and few sprigs of mint to make it all dainty…but then again that’s just me! You’d might as well have this out of the blender jar 😜..who’s to know!?

White Chocolate Treats

Ok…so this sounds mushy at the very best..but I did make some Chocolates for my hubby this Valentine’s 💓😍 lol! And he found them cute too 💃🏻

Well…to be honest…I wouldn’t really call it ‘making’ them…unless that’s what we are calling using ‘leftovers’ these days 😁😜

Homemade chocolate Polkapuffs

Why leftovers you may ask….well. I had some odd, broken pieces of Morde’s white Compound in my refrigerator post icing my Eggless Red Velvet Cupcakes. Also had some coloured sugar sprinkles lying around…so thought of using these along with my silicon chocolate moulds to make something quick! 😬😬…hence these Treats😊 Let’s get started….these take approx 30 mins to get ready …actually ready to eat!! Cool..ain’t it!?

A few pointers to keep in mind…

Do not try to melt the Compound Chocolate in the microwave…it could burn it as the chocolate is very delicate. Use a double boiler as far as possible.

Do not stir the the chunks of Compound Chocolate while it melts…that can make the melted chocolate very grainy.

Yield: 7-10 pieces

Equipment: a deep saucepan, a heat proof bowl (preferably borosil/ Pyrex), measuring cups/ spoons, silicon Chocolate moulds in any shape.

Ingredients:

1/2 cup chopped Morde White Compound

sugar sprinkles or sugar balls as needed

Method:

Heat water in the saucepan until it starts to boil, then place the heatproof bowl over the saucepan in such a way that the base of the bowl does not touch the boiling water below in the pan. Next, keep the chopped compound chocolate in the bowl and maintain the flame on it’s lowest possible level. Let the compound melt slowly and do not stir it.

While the compound melts, place the sugar balls/ sprinkles in the chocolate moulds, just a thin layer covering the base only.

Next, check the compound chocolate that is melting, it should be almost melted by now. Remove the bowl from the top of the saucepan. Stir the melted compound chocolate just once. It must be smooth and lump free.

Next, add 1-2 tsp of the melted compound chocolate over the sprinkles placed in the moulds. Fill the moulds to the top. Do the same for all the moulds and place them on a tray. Place this tray in refrigerator or the freezer for about 10-12 mins. They will be completely set and hard by then. When you break the chocolate in half, you should hear a ‘snap’! That’s the sound of a perfect homemade chocolate.🤓🤓😬

Follow the same recipe for Dark chocolate compound or Milk chocolate compound too. 😊

They keep well for 3-4 days under refrigeration.

Veg Chilli Milli

Being a fan of restaurant style gravies/ sides….I am often looking forward to make them at home too! Veg Chilli Milli is one such side which tastes excellent and has many veggies which makes it healthy 🤓 

And it also goes very well with some Wholewheat Tawa Naan or Methi Makka Roti👌🏼🤗..however is served with some plain Parathas this time around as my hubby wanted to have them.

This definitely is something that you will want to have again and again…🍽🍛 and really easy to make too!

Let’s get started…

Yield: serves 2-3

Equipment: a pan, measuring cups/ spoons, ladle.

Ingredients:

1 cup shredded cabbage

1/2 cup sliced carrots

1/2 cup great peas

1/2 cup sliced capsicum

3/4 cup finely chopped onions

3 tsp ginger-garlic paste

1 cup chopped tomatoes

12-14 nos. cashews soaked in warm water for 15 mins

2-3 sliced green chillies

salt to taste

1/4 tsp turmeric pwd

1 tsp coriander pwd

1 tsp degi mirch

1-2 each of black cardamom, green cardamom, bay leaf & cinnamon stick

1/2 tsp jeera seeds

a pinch of hing (asafoetida)

1/2 tsp garam masala pwd

2-3 tbsp Amul cream

1 tsp kasuri methi

1 tsp lemon juice

coriander leaves to garnish

Method:

Make a smooth purée of the tomatoes & soaked cashews without adding any water. Set it aside.

Heat oil in the pan, add all the whole spices, jeera & hing. Let them splatter for a min. Then add the chopped onions & chillies. Cook until they onions turn golden. Then add the purée, turmeric, degi mirch, coriander pwd & ginger-garlic paste, stir well and cook until the raw smell goes away. The paste will start leaving the oil around the edges once it’s cooked.

Next, add the cabbage, capsicum, carrot & peas. Season with salt and mix well. Cover & cook until the veggies are soft. That takes about 7-10 mins on medium flame. Then add the cream and garam masala. Mix well. If needed, you can add some water to correct the consistency.

Let it cook for about 5-8 mins. Finally add kasuri methi & lemon juice. Stir well & garnish. Serve with Rotis/ Parathas.

What’s your favourite snacking option? Can’t think of one?! Well…the same happens with us too😜 I just can’t pick one favourite! My hubby and I are die-hard street food fans….but I make them at home whenever we have a craving to ensure its healthy. ☺️

Masala Pav is almost like Pav Bhaji but so different in terms of preparation using fewer ingredients and time. Also, it’s the best way to use up some left-over Pav bread or even make a instant snack for kids too👌

Masala pav is spicy, robust and the Pav simply soaks up all the flavours and the becomes so moist..it melts in the mouth! 😉

Common, let’s get started…

Yield: serves 2-3

Equipment: a wok, a griddle/ non-stick pan, measuring cups/ spoons.

Ingredients:

5-6 nos. Pav

1/2 cup chopped onions

2 tbsp ginger garlic paste

1 tbsp chopped green chillies

1/2 cup chopped capsicum

1/2 tsp turmeric pwd

1 tsp degi Mirch

1 tbsp Pav Bhaji masala

1 1/2 cup chopped tomatoes

salt to taste

2 tbsp oil

butter as needed

lemon juice as needed

Method:

Slit all the Pav horizontally, butter them on all sides and set them aside.

Heat oil in the wok, once it’s hot add the onions, green chilli, ginger- garlic paste. Sauté until the onion turns golden. Then add the capsicum and cook for a few mins until it turns soft. Season with salt and add the remaining spices along with the Pav Bhaji masala as well. Mix well and add the tomatoes. Now cover and cook until the oil seperates. You can add some water if the cooked mixture looks dry, about 1/2 cup or so. Turn off the flame.

To assemble the Masala Pav, add butter to a hot pan, place the buttered Pav in the pan and add the prepared mixture and coat the Pav well with it. Cook for about 2-3 mins. Serve hot with some lemon juice and garnish with chopped coriander leaves!

Schezwan Paneer

Schezwan Paneer or Chilly Paneer happens to be one of my favourite starters when I am at a restaurant….😁 perfectly spiced sauce with juicy paneer makes it irresistible for many of us!

Veggies give it a lovely crunch in between bites of velvety sauce..👌..this is something so easy to make at home.. I am sure everyone has their own version. So do I! I keep making it often and never really follow a recipe! But one thing that I try to always use is my Homemade Schezwan Sauce for making this! The flavours are so awesome…just like the restaurant style Schezwan Paneer! 😉

Here’s the easy peasy recipe…

Yield: serves 2

Equipment: a pan, a spatula, measuring cups/ spoons.

Ingredients:

200 gms cubed paneer (cottage cheese, or you can use tofu too)

1/2 cup cubes of capsicum

1/2 cup cubes of onion

8-9 cloves of garlic sliced roughly

5 tbsp Schezwan Sauce

salt to taste

sugar to taste

4 tbsp oil

1 tbsp toasted white sesame seeds (optional)

Method:

Heat oil in the pan, once it’s hot, add the sliced garlic. Let it turn golden brown, then add the cubes veggies and season with salt & sugar. Cook until these they a slightly soft but not completely cooked. They must retain their colour as well.

Then add the cubed paneer and Schezwan sauce. Give them all a mix but be careful not to break the cubes of paneer. Cook for about 5 mins. Turn off the flame and serve it hot. This goes well with some Hakka Noodles or Fried Rice too👌☺️

Garnish with some sesame seeds if you want to.

(*Please note that I haven’t added any extra soy or chilly sauce as my Homemade Schezwan Sauce is spicy enough. You can add extra sauce if you’d like it to be more spicy)

Sesame Soya Tikki

Everyone enjoys snacking on some crispy, crunchy finger food! Dipping it in some sauce just makes it all the more yummy…along with a delicious drink to wash it all down👌😁…although a cup of hot tea does the trick too!

These Sesame Soya Tikkis make for a great starter/ snack as they are loaded with yummy & healthy ingredients…no frying…no oily mess! Serve these with my homemade Schezwan Sauce and some Iced Green Tea Limeade…perfecto!

They even make a great lunch box for kids…😊 Let’s get started..

Yield: 6-8 medium Tikkis

Equipment: a non stick pan, a mixing bowl, measuring cups/ spoons, a spatula.

Ingredients:

2 nos. large boiled & mashed potatoes

1/4 cup soya granules

1/4 cup grated carrot (you can add any veggies of your choice or skip them too)

1/2 tsp ginger paste

1 tbsp chopped mint leaves

1 tbsp chopped coriander leaves

1/2 tsp Chaat masala

1 tsp chopped green chillies (*omit it when you are cooking these for kids)

1 tsp roasted cumin pwd

1/2 tsp red chilli pwd*

salt to taste

2-3 tsp oil to shallow fry the tikki

1/2 cup slightly roasted white sesame seeds

Method:

Soak the dry soya granules in one cup of warm water for 15 mins & squeeze out all the water well. Place it aside.

Next, add all the above ingredients except oil and soya granules in a mixing bowl, mix them well. Then add the soya granules & combine everything well.

Next, shape the mixture in equal sized Tikkis, roll them in the sesame seeds and set them aside. Heat the non stick pan, once it’s hot enough, place the tikkis on the pan & add few drops of oil around them. Cook them on medium flame for 3-4 mins on both sides or until the seeds turn golden brown and crunchy. That’s it, serve them piping hot! 😀

Homemade Schezwan Sauce

We Indians love our Indo-Chinese cuisines to the hilt! 😜 I am no different….I am crazy for the all of them…😊

And Schezwan Sauce happens to be my favourite…ever since I first tasted it as a dip along with some Spring Rolls long back! I just fell in love with the fiery, tangy and the mild sweetness all at once!

I even started buying this sauce by a popular brand…however it was obviously full of synthetic preservatives & added colours. So not exactly the healthiest option. So I looked up a few recipes & found one which was perfect. It tastes fiery and absolutely lip-smacking! 😬😬😉

*Please note that I have used fresh red chillies as they are in season now. However, you can use dried chillies, just soak them in warm water for 1 hour & de-seed if you wish to reduce the heat. Then, continue with this recipe.

*We don’t like a very chunky texture hence, I grind the ginger & garlic with the chillies. You can cook them with the onions.

Let’s start the recipe..

Yield: approx 400 gms

Equipment: a wok, a ladle, measuring cups/ spoons.

Ingredients:

200 gms chopped fresh red chillies (de-seed if needed)

1/4 cup chopped garlic

1/4 cup chopped ginger

5 tbsp oil

6 tbsp vinegar (I used Apple Cider vinegar, you can use any variety but avoid balsamic or a darker vinegar)

4 tbsp soy sauce (I used light soy)

2 tbsp ketchup (add more if you like it sweeter)

1/2 cup finely chopped onion

1 tsp cornstarch/ cornflour

salt to taste

Method:

Grind together chopped chillies, ginger & garlic using 2 tbsp of vinegar to a smooth paste. Set it aside.

Then, heat oil in the wok and sauté the onions until translucent. Next add the paste you have kept aside. Cook for 5-8 mins on low flame. Season with salt, add the remaining vinegar & the sauces too. Mix well. Then dilute cornstarch/ cornflour with 2 tbsp water & add it to the simmering sauce, keep stirring continuously for a few mins. Let the sauce again simmer for about 5 mins. That’s it…turn off the heat and cool completely before storing in glass/ porcelain bottles.

It stays well in the refrigerator for at least 2 weeks although I have stored it for almost 45 days with no change in flavour & colour.

Serve it with any & every snacks 😜
