Mango & Tutti Frutti Ice Cream

My love for a Popsicle is eternal…but I do love a bowlful of creamy, delicious ice cream! Yes I have a rather good collection of ice creams on my blog here…all super tempting 😛

But how could I miss out on sharing a recipe for Mango Ice Cream…the King of fruits😍 this recipe is adapted from my No Churn Orange ice cream recipe with a bit of change… So basically it’s a no churn, no cook, eggless ice cream that requires just 3 key ingredients!

Mango & tutti Frutti ice cream How to make mango ice cream Eggless mango ice cream Polkapuffs recipes

I have added tutti frutti just because I felt like it…it’s completely optional or you can replace it with some chopped nuts or Choco chips…even butterscotch chips!😊 The choices are endless…and you always have the option of keeping it plain.

Since I like the fuss-free way of doing things…this ice cream had to be no-churn! Simply whisk everything well…and dump it in the freezer for 6-7 hours. The texture is beautiful and the flavour is absolutely spot on!

Mango & tutti Frutti ice cream How to make mango ice cream Eggless mango ice cream Polkapuffs recipes

Anyways…let’s get going with the recipe… It’s just a 15 min prep job…and the freezer takes care of the rest.

Yield: easily serves 4

Equipment: a electric whisk (manual whisk works too), a large stainless bowl, a rubber spatula, a Tupperware or an Aluminium container to set the ice cream.

Ingredients:

200 ml Amul whipping cream

1/2 cup icing sugar

pulp of 3 medium sized Alphonso mangoes

1/2 cup mixed tutti frutti (optional)

Method:

You will need to keep the stainless steel mixing bowl and the manual whisk or the electric whisk attachments in the refrigerator for about 30 mins to chill before you use them.

Then, add the cream to the chilled bowl and whisk it well until you achieve soft peaks. I have used an electric whisk so it took me about 4-5 mins to get the task done. If you’re using a manual whisk, you may need 10-12 mins for the cream to have soft peaks. But be careful to not over whisk the cream, because it may split.

Mango & tutti Frutti ice cream How to make mango ice cream Eggless mango ice cream Polkapuffs recipes

Next, add the mango pulp & icing sugar to the whipped cream and whisk these together for a minute or two or just until everything has combined well. Lastly, add the tutti frutti or anything you wish to add & fold it in using a rubber spatula or leave it as it is. Pour the mixture into an aluminium bowl or a Tupperware/ any freezer safe container and freeze it for 6-7 hours or overnight.

Before you serve the ice cream, let it thaw for about 5-7  mins at room temperature and then scoop out the ice cream!! That’s it😀

Mango & tutti Frutti ice cream How to make mango ice cream Eggless mango ice cream Polkapuffs recipes

Notes:

If you don’t have Amul whipping cream, you may use any other brand or even non-dairy whipping creams.

You can add more icing sugar as per taste. The reason we use icing sugar here instead of regular sugar is because it helps setting the ice cream with a perfect texture.

You can use canned mango pulp too if you don’t have fresh mangoes available.

Hope you try this soon 😋

Shreya❤️

Banana Muffins|Banana Bread

Those bananas sitting in my fruit basket were turning darker every passing minute in this heat….and yes, I had wrapped the bunch head with cling wrap…but it won’t work with the soaring temperatures! Sigh!! 😔

Where do these overripe bananas end up usually..in the BIN. Yes…they do, don’t pretend otherwise. We’ve all done that….though we promise ever to do it again out of the guilt over wasted food, we still do! Else, banana milkshake happens…well that’s very common and usually better for kids…too many calories for my hubby & me😝

In the past too, I’ve shared a couple of recipes to finish off these overripe bananas. Being summers almost everywhere, you can try my 2 Ingredient Banana Ice Cream. It’s so yummy and gets done in a breeze…😛slllluurrppp! Or if you are willing to bake something vegan, try these awesome Butterscotch flavoured Banana Breakfast Bars which uses wholewheat flour.

So thought of making an Old Fashioned Banana Bread or Banana Muffin. The beast thing is one recipe takes care of both options!

Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes

Look at that texture….perfectly moist, crumbly and absolutely melt in the mouth. That’s why I love a Banana Bread so much, it’s easy to make and easier to eat 😛 This too happens to be great for a grab-and-go breakfast.

Before we go on to the recipe, here are a few pointers to keep in mind when baking a Banana Bread/ Muffins- make sure that the bananas are really overripe. They must be literally falling apart if handled roughly. If they are even slightly firm, they won’t blend well with the batter and the resulting bread/ muffins will lack the actual flavour of bananas and could turn out very dry too. Make sure you don’t over mix the batter and do not let it sit for too long once it’s ready.

Most importantly, know your oven well. As every oven works slightly differently, you need to understand the temperature best suited to bake the bread/ muffin well. They may turn dry if over baked. They could easily remain uncooked from the centre and turn brown on the top and bottom if baked at a very high temperature. The recipe below will say the temperature that works best for my oven.

If you don’t have cupcake liners ready…it’s not an issue. As you see here, in the pictures, I didn’t have any liners too…ran out of the ones I usually use so I improvised…something I had seen on Pinterest. Just use parchment/ butter paper and cut out large squares, they need not be absolutely perfect. Line your muffin tray with these squares and spoon in the batter as usual. They look really rustic…and get the job done!

Oh, by the way… I made a ring cake along with a few muffins…why?! Don’t ask me that…I simply felt like it..🤗

Yield: one small ring cake and 8-9 medium sized muffins.

Equipment: a large mixing bowl, potato masher, a wired whisk, a cooling rack, cake mould (ring or round/ square), muffin tray, measuring cups/ spoons.

Ingredients:

3 nos. overripe bananas

1/4 cup unsalted butter

1/2 cup Demerara sugar (brown sugar)

3/4 cup castor sugar

1 tsp vanilla essence/ extract

1 pinch nutmeg pwd (optional)

1 nos egg

1/4 cup milk

1 tsp baking powder

2 cups APF (Maida)

if you like, you can add Choco chips/ blueberries/ raisins/ pecans/ walnuts, etc as per your preference.

Method:

Line your muffin tray with the liners. Grease and dust your cake mould if making a bread. Set them aside. Preheat the oven @180’c for 10 mins.

Mash bananas using the potato masher in a large bowl. Add the softened butter & milk to it. Whisk it well, add the egg, nutmeg pwd,  both the sugars & vanilla extract and whisk once again until the sugar is dissolved. Took me about 5-6 mins.

Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes

Next, add the baking powder & APF (you can sieve these once seperately before mixing with the batter). Fold them with the wet ingredients. But do not over mix.

Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes

Fill the muffin tray with the batter and or the cake mould as shown below.

Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes Banana Bread bread Eggless banana bread recipe How to make banana bread Banana muffins recipe Breakfast muffins recipe Polkapuffs recipes

Bake the muffins at 170’c for approximately 20-22 mins. If baking a bread, then bake it at 170’c for approximately 30-35 mins or a skewer entered in the center of the bread comes out clean or with a few moist crumbs. If not, then bake for a further 5-7 mins @160’c. (Refer the pointers given above).

Once done, cool them on the cooling rack for 15-20 mins before you unmould the bread. This bread / these muffins keep well for 2-3 days in an airtight container.

Khoya Peda

I have always loved Peda. They are soft, slightly fudge and absolutely melt in the mouth! 😋

Ever since I was a kid, I would wait for a trip to Mahalaxmi Temple in Mumbai to lay my hands on some of the small, yellow Pedas that we would offer as ‘Prashad‘ to the Goddess. Those were the yummiest Pedas I have ever eaten!

khoya Peda Polkapuffs recipes Peda Diwali sweets

Khoya Peda or Mawa Peda is really easy to make and one of the most common homemade sweets during festivals like Diwali or Dushhera.

In the past I have shared the recipe for Khoya Burfi. Today I am sharing the recipe for this easy Peda…

Yield: 7-8 Pedas

Equipment: non-stick pan, a wooden spatula, measuring cups/ spoons.

Ingredients:

200 gms unsweetened khoya

1 cup powdered sugar

1/2 tsp elaichi pwd

a few chironjee or pistachio flakes to garnish

some ghee to grease your palms

Method:

Grate the khoya in a bowl. Add the powdered sugar to the grated khoya. Mix the two well. Then heat a pan, add the khoya-sugar mixture to the pan. Cook it on low flame and stir continuously. The khoya and the sugar will first melt and then slowly start to thicken in about 15-20 mins.

Khoya Peda Polkapuffs recipes Peda Diwali sweets

Add the cardamom pwd and mix again. Turn off the flame. Let the mixture cool down completely. (I let the mixture in the refrigerator for about 45 mins as the climate is very hot and humid and making the Pedas would be difficult.)

Khoya Peda Polkapuffs recipes Peda Diwali sweets

Once the mixture has cooled down and solidified a bit, pinch lemon sized balls of the dough and roll them between greased palms and make smooth Pedas. You can even decorate them with some chironjee or pistachio flakes. That’s it! These keep well in the refrigerator for 2-3 days easily.

Enjoy these Pedas…you won’t be able stop at one.

Kesar Pista Kulfi | Indian Ice Cream

An Indian dessert that makes everyone go weak in the knees….yes Kulfi! Super creamy, deliciously sweet and chilled. Such a treat during summers!! 👌🏼 Flavour it with whatever takes your fancy!

Kulfi recipe How to make instant kulfi Easy recipe for kulfi Homemade kulfi Kesar pista kulfi recipe Polkapuffs Indian ice cream

Look how it melts…all that thick cream…sluurrrrpppp!! But then that’s what’s the best part about Kulfi. The rich creaminess that we get after reducing milk and cooking it with saffron (kesar) & pistachios (pista)…is just out if the world! 😋

Kulfi recipe How to make instant kulfi Easy recipe for kulfi Homemade kulfi Kesar pista kulfi recipe Polkapuffs Indian ice cream

I wanted to make Kulfi a few summers ago and found an absolutely easy peasy recipe sitting right under my nose…quite literally!😁

Polkapuffs

Yes…I have kept this little empty package since then and this recipe never fails me! Perfect Kulfi every time!💃🏻I have altered the flavour a bit to suit our preference.

Kulfi recipe How to make instant kulfi Easy recipe for kulfi Homemade kulfi Kesar pista kulfi recipe Polkapuffs Indian ice cream

Common, let’s make Kulfi!

Yield: 3-4 kulfis

Equipment: a heavy bottomed pan, measuring cups/ spoons, kulfi/ Popsicle moulds, ice cream sticks.

Ingredients:

500 ml milk (I use Amul toned milk – 2%fat)

1/4 cup warm milk

2+1/2 tbsp cornflour

1+1/4 cup sugar

1/2 cup cream (I used Amul fresh cream)

1/2 tsp cardamom pwd

chopped pistachio & almonds as per preference (I add 2 tbsp of each)

few strands of saffron (kesar)

Method:

Heat 500 ml milk in the pan, let it boil until the milk reduces a little and becomes thick. Keep stirring so that the milk does not stick at the bottom and burn.

Mix cornflour with 1/4 cup warm milk until it’s lump free. Add this mixture to the reduced milk and keep stirring until the cornflour blends properly with the milk. Add sugar, saffron & nuts. Cook for two mins more. Keep it aside to cool for a few mins.

Kulfi recipe How to make instant kulfi Easy recipe for kulfi Homemade kulfi Kesar pista kulfi recipe Polkapuffs Indian ice cream

Next, lightly beat the cream. Add the cooled milk and nuts mixture to the beaten cream. Beat again for a few mins (I used a electric beater). Fill this mixture into moulds and keep it in freezer to set for about 7-8 hours or even overnight. Once the Kulfi has set for 3-4 hours, put an ice cream stick in the centre of each mould.

Thaw the frozen Kulfi for a few mins, rub the moulds between your palms, tug on the ice cream stick and unmould it gently. That’s it! Your creamy Kulfi is ready☺️

Baked Donuts | Baked Doughnuts

Who can resist these yummy doughnuts a.k.a donuts??! They are soft, spongy and just the right kind of sweet! They are BAKED not FRIED! ☺️😉

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

Look at these plump, golden beauties😍 Absolutely melt in the mouth! And so much healthier than the fried ones. Not that the fried ones don’t taste good, it’s just that they are too full of calories and they restrict you from enjoying more than one at a time! So basically, bake your donuts and be as greedy as you wish! 😬

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

I chose to go for bright coloured sugar glaze…one can go easy with the colours. Just roll them in a bit of powdered sugar and they will be just as yummy. I’ve tried fried ones earlier, but had been wanting to bake some for many days….and my first try has definitely been very satisfying 😊

Let’s get on with the recipe…

Yield: 8-9 medium sized donuts

Equipment: baking tray, cooling rack, measuring cups/ spoons, baking paper, donut cutter (or any round object with a sharp edge), rolling pin, a few small bowl, spoons, a large bowl.

Ingredients:

For the donuts:

1+3/4 cup Maida (APF, also extra for dusting)

1 tbsp cornflour (optional)

4 tbsp castor sugar

2 tsp active dry yeast

1/2 tsp salt

1/2 cup warm milk

1 tsp vanilla essence

50 gms unsalted butter

For the sugar glaze:

1 cup icing sugar

3 tbsp milk

few drops of colour of your choice

Method for the donuts:

In a glass, take lukewarm milk (milk must be lukewarm, neither too hot nor too cool else the yeast won’t bloom), sugar, vanilla essence & yeast. Give these a light stir and cover it. Let it sit aside for 15 mins until the yeast becomes frothy.

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

Next, in a large bowl, stir together 1 cup of APF, cornflour & salt. Add the frothy milk & yeast mixture to the flour, mix well together to make a sticky dough. Then add the butter and knead a soft, elastic and smooth dough. Make sure all the butter gets absorbed properly. Add the rest of the 3/4 cup of APF slowly as the the dough may be sticky. Knead for atleast 5-7 mins.

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

Smooth the dough with some more butter and place it in the bowl. Cover it with a cloth and place the dough for the first rise in a warm place for a minimum of 1-1.5 hours.

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

After the first rise, punch the dough down and knead for another 2 mins. Now, dust the kitchen platform with APF & roll the dough using the rolling pin. The thickness should be 1.5 -2 inches so that the doughnuts are plump post baking. Using any cutter, cut the donuts out and place them on a baking paper lined baking tray.

(I don’t have a donut cutter, so improvised using a stainless steel glass with a sharp edge to cut the donuts and a small cap of a soft drink bottle to cut out the holes)

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

I made 9 donuts.

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

Let these rest for another 30 mins for second  rise. Preheat the oven @200’c. After the second rise, bake them for 15-20 mins using both upper lower & upper rods for the first 10 mins. Post that turn off the lower rod, keep the upper rod on so that the donuts turn golden.

Once done, remove them from the oven and place on the cooling rack for about 15 mins to cool them completely.

Baked doughnuts Baked donuts Eggless donuts Eggless doughnuts Polkapuffs recipe

That’s what the texture is like from within! So fluffy…these are baked perfectly👌🏼

For the Glaze:

I used raspberry red colour & blue colour. Just a drop of each. Take 1/2 cup of icing sugar for the first colour, add 1 tbsp milk and 1 drop of colour, mix well so that there are no lumps. Do not let the glaze sit for too long, else it will set. Dip each donut in the glaze, and set it aside to set. You can decorate them with some coloured sprinkles. ☺️

Follow the same process for the blue glaze..using the other 1/2 cup of icing sugar and the remaining milk along with blue colour. Dip the donuts in this too…let them set.

That’s it…done! 😁

Fizzy Orange Popsicles

Yes! My love for Popsicles is very evident…I cannot resist Popsicles! 😛 And Orange Popsicles happen to be favorite ever since I was a kid. It’s so tangy, citrusy and yet deliciously sweet! Just what these relentless Summers need!

Look at that colour….😻 So bright and inviting. Every kid’s favorite flavour…Orange!! But I do like other flavours like Rose, Mango or even Kiwi! So many flavours to choose from this Summer!

Fizzy Orange Popsicles Homemade Popsicles Polkapuff Popsicles Easy summer Popsicles How to make Popsicles at home Summer desserts Frozen dessert recipe

It’s very common to have Orange Squash/ Crush at home during summers…mix it with some chilled water and add a few cubes of ice. I do it too! So, the other day while sipping on some Orange Squash, I wished it was an Orange Soda instead of just plain squash…and that’s when I thought of freezing it for a few hours! That way I’d get to enjoy it as a Popsicle! 😬 One can easily incorporate other flavours of their choice. After all, it takes just 2 ingredients!!

Yield: 3-4 Popsicles

Equipment: Popsicle moulds, a jug, spoon, ice-cream sticks.

Ingredients:

Club Soda …as needed per person 1/2 a glass approx

Orange Squash/ Crush…as needed per person 6 tbsp. approx. (you can adjust this)

Method:

In a jug, combine the squash along with soda very quickly so that the fizz from the soda remains fresh. Add a little extra squash as it gives a nice sweet flavour & a bright colour. Fill the popsicle moulds, cover with foil or Popsicle caps and freeze for 3 hours. Remove the moulds from the freezer, the Popsicles will be 50%- 60% frozen by now, place the ice- cream sticks in each Popsicle. Cover with foil or popsicle caps. Freeze for another 3-4 hours to freeze completely. Let these thaw for a few mins before you unmould and enjoy! 🤗

Thandaai Flavoured Bhapa Doi

Holi is just a week away….and I can feel it in the air! Although I am averse to playing Holi, but I do enjoy the array of food Holi brings with it😜

Dahi Wada happens to be a personal favorite…along with Thandaai. Last year I had made Thandaai Mousse which had turned out great! 😍

Thandaai flavoured Bhapa Doi Polkapuffs recipe Bhapa Doi recipe Bengali sweet dish recipe How to make Bhapa Doi at home Holi recipes

This is year too, I wanted to create something with Thandaai. I was looking at options online but didn’t really like anything. Just then I thought of Bhapa Doi, the famous Bengali delicacy. It is basically a steamed yogurt & condensed milk pudding sans the gelatine or agar-agar . It’s really easy to do…with hardly any prepping involved.

Thandaai flavoured Bhapa Doi Polkapuffs recipe Bhapa Doi recipe Bengali sweet dish recipe How to make Bhapa Doi at home Holi recipes

I knew that the flavours of Thandaai will go very well with Bhapa Doi, but I still looked up on Google if I can find anything interesting, nada! Couldn’t find anything related, so thought I’d try it anyway, see if it actually works. Surprisingly, it does! This tastes very delicious with hints of the Thandaai flavour and the smoothness of the Bhapa Doi!! 😊😊 So, I decided to blog it too.

Let’s get going….

Please note that I have made a small batch as a trial, double or triple the quantities for a larger batch.

Yield: serves 4

Equipment: a large pressure cooker, a mixing bowl, wired whisk, measuring cups/ spoons, a small blender.

Ingredients:

For the Thandaai Powder:

5-6 nos. almonds

5-6 nos. pistachios

4-5 nos. cashews

3-4 nos. peppercorns

1/2 tsp fennel seeds (saunf)

1/2 tsp watermelon seeds (magaz)

1/2 cardamom pwd

a few strands of saffron

For the Bhapa Doi: (adapted from Sanjeev Kapoor)

1/2 cup milk

1/2 cup hung curd

200 gms condensed milk

Method:

To make the Thandaai powder, grind all the ingredients mentioned above coarsely in a blender. You can make a fine powder too. Set it aside.

Take about 2-3 cups of water in a large pressure cooker, place the seperator plate at the bottom. Turn on the flame and let the water come to a boil.

Thandaai flavoured Bhapa Doi Polkapuffs recipe Bhapa Doi recipe Bengali sweet dish recipe How to make Bhapa Doi at home Holi recipes

In the meanwhile, in a mixing bowl, take hung curd and beat it well. Then add milk, Thandaai powder and the condensed milk. Whisk them all together until well combined.

Pour this mixture into small single serving bowls or all in a single mould, cover with a cling film, make a few incisions/ cuts on the film to let the steam pass through, place it in the pressure cooker on the seperator plate. Close the lid of the pressure cooker without it weight. Steam it for approximately 35-40 mins on a gentle flame.

Once done, remove the Bhapa Doi out of the pressure cooker, remove the cling wrap and chill it in the refrigerator for 45-60 mins before serving 😊

The flavors are so fresh and fruity with hint of tang. I like this slightly chunky so did not mash the fruits too much, it’s completely up to you. I highly recommend that you make this once at least while we are still getting loads of fresh strawberries all around us.

3 Ingredient Strawberry Jam | Strawberry Preserve | No Pectin Strawberry Jam | Homemade Strawberry Jam

I had made a batch a few years ago and had long forgotten all about it until I found a really nice recipe just last week! I was excited and wanted to give it go…and it has turned out just perfect! The best part is that my hubby…who loves his Strawberry Jam/ Preserve, approved this with a big smile! Happy Dance!!! 💃🏻💃🏻🤗 It tasted fabulous with some bread…or go crazy making so many more desserts using this!

3 Ingredient Strawberry Jam | Strawberry Preserve | No Pectin Strawberry Jam | Homemade Strawberry Jam

Let’s get going with the recipe.

Wash the strawberries, pat them dry.
Then hull them using a paring knife (a regular knife will also do).
Chop them roughly and keep them in a large bowl. Add sugar to this and mix well.
Cover and set it aside for 4-5 hours. Remember to stir it once every 30 minutes or so.
This will macerate the strawberries well (help in releasing the juices).

3 ingredient strawberry jam Homemade strawberry jam recipe Polkapuffs recipe No pectin strawberry jam recipe

After 4-5 hours, that’s how they should look.
Alongside, place a ceramic/ stainless steel plate in the freezer, it will be used later to check the consistency of the jam.
Heat a heavy bottomed pan, add the strawberries with all their juices to the pan, stir continuously until they come a rolling boil, this will take about 6-7 minutes.

Using a potato masher, mash the strawberries well and continue to stir.
Cook for another 10 minutes. Add the lemon juice at this stage (lemon juice is added to give a nice gloss to the jam).
Let it cook & allow the juices to reduce for a few minutes, but ensure you stir it constantly.

3 ingredient strawberry jam Homemade strawberry jam recipe Polkapuffs recipe No pectin strawberry jam recipe

Once the jam looks thick and gooey, drop some on the chilled plate and wait for 30 seconds to let it set. Then draw a line in between, if the lines do not spread into each other, it means that the jam is ready & you can turn off the gas.
If not, then cook it for another 5-7 minutes and repeat this step with another chilled plate.

3 ingredient strawberry jam Homemade strawberry jam recipe Polkapuffs recipe No pectin strawberry jam recipe

Cool the cooked jam thoroughly and store it a clean & dry glass bottle/ jar. Always use a dry spoon to remove the jam. Store this in the refrigerator and it should last for over 3 months.

3 Ingredient Strawberry Jam is so easy to make and comes together in a flash, it needs no pectin. Enjoy this with some bread or top your favorite muffin with some jam!

Ingredients

  • 400 gms fresh strawberry
  • 1 cup sugar
  • 1 tsp lemon juice

Instructions

  1. Wash the strawberries, pat them dry.
  2. Then hull them using a paring knife (a regular knife will also do).
  3. Chop them roughly and keep them in a large bowl. Add sugar to this and mix well.
  4. Cover and set it aside for 4-5 hours. Remember to stir it once every 30 minutes or so.
  5. This will macerate the strawberries well (help in releasing the juices).
  6. After 4-5 hours, that's how they should look.
  7. Alongside, place a ceramic/ stainless steel plate in the freezer, it will be used later to check the consistency of the jam.
  8. Heat a heavy bottomed pan, add the strawberries with all their juices to the pan, stir continuously until they come a rolling boil, this will take about 6-7 minutes.
  9. Using a potato masher, mash the strawberries well and continue to stir.
  10. Cook for another 10 minutes. Add the lemon juice at this stage (lemon juice is added to give a nice gloss to the jam).
  11. Let it cook & allow the juices to reduce for a few minutes, but ensure you stir it constantly.
  12. Once the jam looks thick and gooey, drop some on the chilled plate and wait for 30 seconds to let it set.
  13. Then draw a line in between, if the lines do not spread into each other, it means that the jam is ready & you can turn off the gas.
  14. If not, then cook it for another 5-7 minutes and repeat this step with another chilled plate.
  15. Cool the cooked jam thoroughly and store it a clean & dry glass bottle/ jar. Always use a dry spoon to remove the jam. Store this in the refrigerator and it should last for over 3 months

Notes

Dry the strawberries completely before slicing them. Let the strawberries macerate well to get the best taste. Cool the jam completely before storing them in jars.
