Strawberry Popsicles – Gluten free, Vegan, Paleo

I love popsicles and I cannot lie. LoL!!! It’s not a secret I guess. Each summer, I share a few recipes. These Strawberry Popsicles are pretty straightforward too. This recipe is gluten free and vegan. It is also Paleo. Hence, folks who are on a diet can enjoy these too.ย

Strawberry Popsicles – Gluten free, Vegan, Paleo is a new experiment which rocked! Last year I had shared the recipe for my Volcano Pops, for which I got amazing feedback too! And have you guys seen my Mango and Kiwi Popsicles, pretty and so flavorsome! There are so many kinds of fruit based popsicles I’m yet to try and share here, the possibilities are endless.:)

I prefer using everyday, easily available ingredients for making pops. Theseย Strawberry Popsicles – Gluten free, Vegan, Paleoย are very easy to put together. Ideal for kids too as these do not contains added colors or preservatives. Since they are full health, it’s safe to say that you can have them for breakfast when it gets way too hot! No one’s judging!

So coming to what goes into it, well anything goes actually. I love strawberries and they are in abundance around me so I’ve used those. Use any fruit juice or pulp, it will work. To my surprise, strawberries are really sweet this year, hardly any tang or tartness. As always I’ve been snacking on them by the pound! So, when I wanted to male these pops, I didn’t need much sugar. In fact, I’ve used natural sweeteners in a very small quantity to balance the little tang from the lemon juice. For the final element of freshness in every lick, I added something from my kitchen garden!!

The overall flavor blew us away! So little to do and you’ll be all set for these icy cool treats for the next few days. Sounds good??!
Wash and pat dry the strawberries.
We will start with hulling the berries.
Add them in a blender, pour honey or agave.
Top these with a splash of fresh lemon juice.
Add a few sprigs of fresh mint.
Give everything a whizz until smooth.
Pour this into moulds of your choice and freeze until solid or for 8 hours.
Enjoy!

Prep Time: 10 minutes

Total Time: 8 hours, 10 minutes

Yield: 3-4 medium sized Pops

Easy to make delicious Strawberry Popsicles are Gluten free, vegan and Paleo with natural sweeteners.

Ingredients

  • 2 cups fresh strawberries
  • 3 tbsp. honey or agave
  • 1 tsp lemon juice
  • a few sprigs of fresh mint

Instructions

  1. Wash and pat dry the strawberries.
  2. We will start with hulling the berries.
  3. Add them in a blender, pour honey or agave.
  4. Top these with a splash of fresh lemon juice.
  5. Add a few sprigs of fresh mint.
  6. Give everything a whizz until smooth.
  7. Pour this into moulds of your choice and freeze until solid or for 8 hours.
  8. Enjoy!

Notes

Adding honey or agave is optional. If the berries are too tart, add more sweetener as per taste. Mint is optional too but it does give a really fresh flavor.

Volcano Popsicles | Strawberry and Orange Popsicles

Yes, I am absolutely obsessed with Popsicles of any and every kind…actually anything icy! I loved chilled things, even in the dead of cold, I could never pass a chance of enjoying a Popsicle! Not ice-cream though, although my blog has many recipes for both, I am more of a Popsicle girl๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜

If you ask me why not ice-creams…I don’t really have a reason. I just love the juicy and watery flavours of fruit based Popsicles! Always have….always will! They do give me bad throat infections at times but I think they worth every course of anti-biotics I’ve had over the years ๐Ÿ˜œ๐Ÿ˜œ๐Ÿ˜‚

But with this recipe, I will teach you how to make perfect store bought-like texture for these Popsicles. Yes, store bought Popsicles are not full of icicles in them. They are more smooth and have a very even texture, almost like a sorbet but firmer. However, if you wish can follow simple juice and freeze method tooand make Popsicles but they will have icy bits (icicles) in them. I don’t like icicles in my Popsicles and hence this recipe is good for me…I was keen to understand what ingredients goes into the store bought Popsicles, and just on the cover of each popsicle, it is mentioned ‘glucose’….so I’ve done exactly that! Liquid glucose worked so well. Obviously, I adjusted the measurements as the cover never mentioned the proportion and alongside the store bought ones have a fair bit of preservatives too. But I have used just 4 ingredients to make them!

Yield: 4 Popsicles

Equipments: a sauce pan, a juicer (if using homemade juice), measuring cups/ spoons, Popsicle mould, ice cream sticks.

Ingredients:

1/2 cup pulp of fresh strawberries (I did not add sugar, you may if the berries aren’t sweet enough)

200 ml freshly squeezed orange juice (juice of approximately 5-6 oranges)

2 tbsp sugar (I used some for the orange juice as the oranges were a bit tart)

2 tbsp glucose syrup (sweetened, it’s available in any store that stocks all the baking related ingredients) or even corn syrup.

Method:

Keep the mould ready.

In a saucepan, heat orange juice for a few mins. Once it has come to a gentle boil, add the sugar. Mix well using a whisk. Next add the glucose syrup and whisk quickly. Make sure the syrup is mixed very well. Now, turn off the flame and let the orange juice cook down for a few minutes.

Next, fill about 3/4th (approximately 50 ml) of each popsicle mould with the orange juice- glucose mixture. Place the moulds in the freezer and let them set for about 2-3 hours. Remove from the freezer and insert ice-cream sticks in the center of each mould. Freeze again for about 1 hour.

Remove the moulds again from the freezer after an hour, fill each mould to it’s brim with the strawberry pulp. (I didn’t treat the strawberry pulp with the glucose syrup as the pulp doesn’t really have any icicles after freezing).

Freeze the moulds for another 3-4 hours or until the Popsicles are frozen well. To serve, dip the mould in some lukewarm water for 2 mins, gently tug the ice cream sticks and pull out the popsicle from the moulds! Voilร !!! ๐Ÿ˜๐Ÿ˜ enjoy!!

(Note- adding glucose syrup is optional, we can omit that as well and make basic Popsicles)

You can follow this recipe for any fruit juice/ pulp in any combination…they are so delicious and absolutely preservative free. They keep well in the freezer for upto a week, but I suggest try to finish them and make fresh batches every few days. It’s so easy ๐Ÿ˜„

Look at that colour….๐Ÿ˜ป So bright and inviting. Every kid’s favorite flavour…Orange!! But I do like other flavours like Rose, Mango or even Kiwi! So many flavours to choose from this Summer!

It’s very common to have Orange Squash/ Crush at home during summers…mix it with some chilled water and add a few cubes of ice. I do it too! So, the other day while sipping on some Orange Squash, I wished it was an Orange Soda instead of just plain squash…and that’s when I thought of freezing it for a few hours! That way I’d get to enjoy it as a Popsicle! ๐Ÿ˜ฌ One can easily incorporate other flavours of their choice. After all, it takes just 2 ingredients!!ย 

Yield: 3-4 Popsicles

Equipment: Popsicle moulds, a jug, spoon, ice-cream sticks.

Ingredients:

Club Soda …as needed per person 1/2 a glass approx

Orange Squash/ Crush…as needed per person 6 tbsp. approx. (you can adjust this)

Method:

In a jug, combine the squash along with soda very quickly so that the fizz from the soda remains fresh. Add a little extra squash as it gives a nice sweet flavour & a bright colour. Fill the popsicle moulds, cover with foil or Popsicle caps and freeze for 3 hours. Remove the moulds from the freezer, the Popsicles will be 50%- 60% frozen by now, place the ice- cream sticks in each Popsicle. Cover with foil or popsicle caps. Freeze for another 3-4 hours to freeze completely. Let these thaw for a few mins before you unmould and enjoy! ๐Ÿค—

Kiwi is one of the prettiest fruits according to me….so making summery delights using them was on my mind…and Virgin Mojitos happen to me my favorite drink. Hence, I combined the two and made these really delicious Popsicles! They are healthy and absolutely irresistible ๐Ÿ˜‰๐Ÿ˜‰ lets get started with the easy peasy recipe…

Kiwi Mojito Popsicle

Yield: 5-6 small Popsicles

Equipment: measuring cups/ spoons, Popsicle mould, ice cream sticks, blender.

Ingredients:

2 nos. chopped kiwis

1/2 cup water

1/4 cup fresh mint leaves

2-3 tbsp sugar (add more or less)

1 tsp fresh lemon juice

Method:

Heat water in a pan, once it starts boiling, add the mint leaves and sugar. Let these boil on low flame for about 10 mins. Once done, cool completely and strain the mint leaves. Keep the strained water aside.

Next, add chopped kiwi in a blender along with lime juice and the strained water. Blender until smooth. Then fill the Popsicle moulds with this purรฉe and cover with the lids and place the ice cream sticks. Freeze for 6-7 hours or overnight.
