Glutenfree Strawberry Crumble

Remember how I told you guys that I was almost literally rolling in strawberries when I shared my No Pectin 3 Ingredient Mixed Berries Jam recipe sometime last week….well this is another proof that I was actually more than rolling 😂😂 🍓🍓 still have so many more…I have frozen some and the rest I keep chomping on as I keep going about my chores!

They are sweet and so so refreshing… I can’t really put it into words..and while I am hooked to them berries, my hubby loves his muskmelons! Eating seasonal I guess! Besides, the temperatures have soared in the last few days and it’s only the first week of March 😩 …. I think we will live on Watermelon Green Tea Coolers and some Kiwi Agua Frescas or a sorbet on second thoughts ☺️ Well, I don’t mind that in all honesty!

Anyways, so when I am not having these beauties as they are or freezing them…I think of healthier and more delicious ways to have them as desserts. So, I came across something online which so good and had just 140 calories per serving! My hubby would love it! He likes his strawberries cooked or stewed…rather than as a fruit. But sadly, the recipe called for All Purpose Flour 😑😑….. Thinking about replacing it gave me an idea to make it Glutenfree! Simple ingredients and so easy to make….I couldn’t stop grinning 😉

You can use APF if you like that, but I have replaced it with Cornflour or Cornstarch. You won’t even know the difference in flavour! This recipe also includes oats and nut flours (if you are allergic, please avoid them).

So, shall we make ourselves some Glutenfree Strawberry Crumble?!…..

Yield: serves 2

Equipment: ramekins or individual cupcake tin moulds, measuring cup/ spoons, cooling rack, baking tray, 2 small mixing bowls.

Ingredients:

1 cup roughly chopped strawberries (frozen or fresh)

1 tbsp cornstarch/ corn flour

1-2 tbsp sugar (use more or less as per your taste)

1 tbsp cold and cubed unsalted butter

3-4 drops vanilla extract/ essence

a pinch of salt

4 tbsp rolled oats (powdered in a blender, basically oat flour)

3 tbsp almond flour

a few whole strawberries and some fresh mint leaves to garnish

Method:

Preheat the oven @180’c

Use some oil to grease the ramekins/ individual cupcake tins.

In a small mixing bowl, add chopped strawberries with vanilla extract. Mix well. Divide equally  into the two greased ramekins/ tins.

In another mixing bowl, add corn flour/ cornstarch along with the sugar. Mix well. Divide equally onto the portioned strawberries. Mix them once in the ramekin itself.

In the same mixing bowl, add almond flour, salt, cubed butter and oats flour. Rub these together with the tips of your finger until they resemble bread crumb like texture.

Divide this topping equally over the two strawberry filled ramekins/ tins.

Bake at 180’c for about 25-27 mins or until the strawberries start bubbling up and the top crust looks crisp. Mine were done in 20 mins. Every oven does work differently so keep an eye after 20 mins of baking.

Once done, remove from the oven and place on the cooling rack for a few minutes. We enjoyed them warm as they were, but if you wish, serve these with a scoop of vanilla ice cream!! Bliss😍😍😍

Please note:

~I have used glass ramekins meant for baking at higher temperatures. You can use regular white porcelain ones too or just use a single cake tin and bake the whole thing as a large serving and then later divide into 2-3 portions as per your choice. The taste and the method shall remain the same.

~You can serve this cold too. Once baked and cooled, this can stay in the refrigerator for 2-3 days. Just ensure you’re covering it well with some aluminium foil.

~follow the same recipe with raspberries, blackberries, blueberries, etc. as well.

Fruity Green Tea Cooler

Summers have arrived and how!? The heat kills me and all I want to do is sip on something chilled. But my hubby & I, we are both teetotallers, so I  try to make some healthy, non-alcoholic drinks when at home..😍 

Last summer too, I had shared some easy to do mocktail recipes over at Summer Siesta.  You may even find some of the most delicious ice creams there! 👌

As I have said above, that we are a teetotaller couple….well that’s not entirely true because…I don’t even drink tea or coffee!! Yes, that’s right, I DON’T! Never have needed the kick from caffeine to wake me up every morning or to get rid of a bad headache. When most people learn this fact about me, they are surprised and try to convince me otherwise and stuff…LOL!! Makes no difference to me 😝

But I always make a large mug of tea and that’s just for my hubby…who loves his ‘chai’, proper with ginger and lots of milk! To be honest, he’s the one who taught me how to make a ‘decent cup of tea’. I’d never be told to make any at Mom’s as I never drank any so nobody trusted me to make it well! Hahahah…and I never complained😹😹

So coming on to my Fruity Green Tea Cooler, it’s delicious with a hint of grassy flavour that it gets from the green tea…but it’s dominated by the fruitiness it gets from one of my favourite fruits! 😋 Besides, it’s too easy to make and will compliment everything summery…🍹🍹🍹

Let’s see how….

Serves: 2

Equipment: a blender, a saucepan, measuring cups/ spoons.

Ingredients:

2 cup chilled de seeded & chopped watermelon

1 nos. green tea bag (I used Lemon & Honey)

1 + 1/4 cup water

1/2 tsp lemon juice

honey to taste

ice cubes as needed to serve

Method:

Brew the green tea with warm water. Let cool down completely. Then chill this green tea for about 30 mins.

Once this is chilled, add the green to the blender along with lemon juice, chopped watermelon & honey. Blend all these for a minute until everything is blended well. That’s it, add ice cubes if you like & enjoy!

Now, doesn’t that look absolutely charming! I guess having something as healthy as this is much better than grabbing a can or two of cola!!

Dahi Wadas on a Skewer!

I have to have Dahi Wadas for Holi! Not having them is simply not an option 😀 My mom makes the yummiest Dahi Wadas ever!!! And I simply follow her recipe to the ‘T’ 😘

But deep fried Wadas can become a bit too heavy for us…specially when My hubby is perpetually on a diet!😰 I always have to be careful about calories and stuff like that whenever I’m cooking… Not too easy to do but i have that covered in my own sneaky way…😉

Every dieters’ dream..the indispensable ‘appe pan’../ aebelskiver pan. I am sure almost everyone of you out there has one… Small or large..cast iron or non-stick! They all work wonders. I’ve been using it for over a year now and don’t think I would be able to function without one. All my Wadas today are made my magic pan 😉 with very little to no oil at all. Seriously good and no worry of they being oily & greasy.

The Wadas were light, fluffy & so soft just like the ones we deep fry.

And to make it bit more special and colourful, I infused the curd with saffron strands …and presented them on Skewers!!!! 👌😋 😎 Now, who doesn’t like food on a stick! I mean we gorge on kebabs & tikkas all the time.. That’s where I got the idea from! And My dear hubby was indeed impressed 💖

You can present them in the traditional style or put them on skewer sticks…whatever works for you! 😊 Here comes the recipe..

Yield: 21 small or 12-14 large Wadas

Equipment: Appe pan / Aebelskiver pan, skewer sticks, a blender, a large mixing bowl, 2-3 bowls, spice mixer, 2-3 spoons, measuring cups/ spoons, a small saucepan, 2 glass jars

Ingredients for the Wadas:

1 cup skinless white urad dal (black lentil) soaked for 6-7 hrs

10-12 nos black peppercorns

2″ pc ginger

3 nos green chilly

1/2 tsp red chilly pwd

1 pinch hing (asafoetida)

salt to taste

oil as required (optional)

Method for the Wadas:

Grind together all the ingredients mentioned above to make a smooth paste using little water. The paste should not be runny. It’s supposed to be thick and sticky. Let this batter / paste sit for 30mins. Whisk the batter vigorously using a spoon for at least 4-5 mins. This will make the batter very light and airy and will ensure that the Wadas are soft.

Now heat the appe pan, add a drop of oil if needed in every section. Now drop about a 1.5 – 2 tbs of the batter in every section and cook for 2 mins on the first side, then using another spoon flip them over to the other side and cook for another 1-2 mins. Repeat this for the entire batch of the batter. And set aside the Wadas to cool a bit. Then dip them in some warm for 10 mins then drain the water. Squeeze out the extra water. This is done to just soften the wada a little more. Set them aside.

Ingredients for the tamarind chutney:

1 cup tamarind pulp

3 tbsp pwd jaggery (use more if you like)

1/2 tsp each of red chilly pwd & roasted cumin pwd

1/2 tsp crushed saunf Dana (fennel seeds)

1/4 tsp salt

Method for the tamarind chutney:

Heat the saucepan, add the pulp along with the jaggery pwd and stir till the jaggery dissolves completely and the concoction simmers slightly..then season with the above mentioned ingredients. Cook for another 5-7mins. The concoction will thicken slightly. Turn off the gas and let the chutney cool down completely before you store it in a clean, dry glass jar. Set that aside for now.

Ingredients for the green chutney:

1/2 cup coriander leaves washed, dried & roughly chopped

1 no raw mango peeled & cubed

salt to taste

1 tbsp tamarind chutney

1-2 nos green chillies

6-7 nos cloves of garlic

Method for the green chutney:

Put all in the ingredients mentioned above in a blender with a little water and pulse for a couple of mins. The chutney will have a smooth texture. Store the chutney in a clean & dry glass jar.

Ingredients for the saffron infused curd dip:

1 cup thick curd

2 tbsp warm water

15-20 strands of saffron

Himalayan pink salt to taste

Method for the curd dip:

Dilute the saffron with the warm water for 20 mins or until it releases a rich yellow /ocher colour. Mix this yellow saffron water with the curd & the salt. Beat everything well and set aside I refrigerator to cool for 15-20 mins before using it.

For the plating & garnish you will need:

1 tsp roasted cumin pwd

1tsp red chilli pwd

Few pomegranate seeds

2 tsp coriander leaves chopped finely

Plating:

Put 2-4 Wadas on a single skewer stick, drizzle some of the curd dip, tamarind chutney, green chutney. Sprinkle some roasted cumin and red chilli pwd. Add a few pomegranate seeds /jewels. And a final flourish of coriander leaves! Voilà! Do the rest in a similar way & serve right away.

Or just serve in platters like we usually do! ☺️
