I can have a bowlful of soup any day, be it any season! But the nippy evenings and gloomy days have me craving a bowl of hearty Tomato Soup | Restaurant Style Tomato Soup!! It’s creamy, rich and so flavorful! The best part about my recipe for Tomato Soup | Restaurant Style Tomato Soup is that has no butter, no cream, or any flour. Yet it has a lovely, smooth texture and tastes fabulous with some crispy gluten-free croutons.

A bowlful of soup that’s packed with healthy ingredients will be your favorite too! The hubby and me, we simply gulp this soup down by the bowl! We don’t need anything else, maybe some croutons but we are good to go even without any 🙂 This Tomato Soup | Restaurant Style Tomato Soup comes together really easily and has a handful of basic, everyday pantry staples. It is vegan and gluten-free too. So it’s a completely fuss-free meal for me to prep and fills our bellies real good!! My hubby sometimes prefers to pair this soup with my Vegan Vegetable Mayonnaise Sandwiches if he is looking to have a slightly larger meal. You can have this soup with a side of some Corn Cheese Toasts, such a heart-warming combo. It will fill you up and keeps you so warm on those chilly evenings!

Since my Tomato Soup | Restaurant Style Tomato Soup has no butter or cream added, it is super light on the palate too. The little white creamy drizzle you see here is a dash of coconut cream that I was left with after making a potful of my Vegan Green Thai Curry with some steamed rice 🙂

For the croutons, I didn’t bake my own gluten-free bread. I have this tiny hole in the wall kinda place near my house that stocks the freshest gluten-free bread too. They are delicious and the store often runs out of stocks around 12 pm. I simply love their bread and healthy snacks and often get some for us. So I used some of those gluten-free bread slices to make us some crispy and crunchy croutons!! Nothing fancy, just some good ol’ olive oil, salt and pepper seasoned croutons do the trick for us 🙂

Tomato Soup | Restaurant Style Tomato Soup

Another plus for my Tomato Soup | Restaurant Style Tomato Soup is that it won’t need any blender. It is a very rustic soup, taste-wise and prep-wise too 🙂

Let us start making this yummy Tomato Soup | Restaurant Style Tomato Soup. 

Start with prepping the veggies. Chop the beets, tomatoes, and onions roughly and set them aside.

In a large, deep, and heavy-bottomed stockpot, add oil. Let it heat a little bit.

Add bay leaves and peppercorns. Sautē for a minute. Add the chopped garlic and ginger next. Again, sautē them for a minute.

Next, add the chopped onions. Stir well and sautē for 5-6 minutes until the onions soften a bit.

Then, add the chopped beets and tomatoes. Season with salt. Cook on medium flame until mushy. Do not cover with any lids, that will spoil the color of the soup.

Also, add paprika and cumin powder. Mix well and stir in intervals.

It will turn nice and mushy after about 20 minutes.

Then add about 1 liter of hot water. Mix well and let everything come to a rolling boil. It should take about 10 minutes.

Turn off the flame, pour the soup through a sieve, and mash the veggies too over the sieve. Collect the pulp and the juices of the soup in a large pot. Heat them again and let it come to a slow boil.

Add salt if needed, also add sugar and cracked black pepper. Add the cornflour slurry now. Stir well and let the soup come to a boil, the soup will thicken a bit. Boil for about 3-4 minutes. Serve the soup immediately along with some croutons or any sandwiches.

Ingredients

  • 2 tbsp olive oil
